Coconut Oil Fudge

I see there are a lot of coconut oil fudge recipes here, so I thought I'd throw in my version (with a little help from Shanny & MCS - from another forum). This is more like milk chocolate. If you want a darker chocolate, add cocoa.

Coconut Oil Fudge

2 oz. cream cheese
1 square baker's chocolate
1/4 cup coconut oil
4 tablespoons butter
1/4 cup heavy cream
1/2 teaspoon vanilla
sweetener to taste
1/2 cup chopped walnuts

Microwave the cream cheese, chocolate, coconut oil and butter 30 seconds, stir. Microwave at 10 second intervals, stirring after each, until the chocolate is melted.

Add the cream, vanilla and sweetener. Beat with an electric mixer until well blended. Place in the freezer for 20 minutes, then beat again until smooth. Stir in the walnuts and spread in an oiled small square pan or container. Refrigerate until firm, cut into squares.

Wow!! That sounds freaking good! I might have to turn on the oven tommorrow. How many netcarbs per serving... I'll figure it out, I just wanna know how much I can eat LOL

coletteygirl, no need to turn on the oven, this requires no baking.

drjlocarb, sorry, I have no idea how long it is stable at room temperature. Only hubby and me here, we grab a square out of the fridge when we want one. I do know it doesn't take long for coconut oil and butter to soften at room temp. But this fudge is more firm than the other coconut oil fudge recipes I have tried. Of course I've only tried about 3 others.

Turn on the oven? Did you mean microwave oven? Or did you think these were baked? Just curious.

Oh no! It's totally fine, thanks for the clarification. Sometimes my mouth jumps before my mind lol. Definately going to be making these soon but I've got to get coconut oil. We still have an extra slice of low carb cheesecake in the fridge so I better get it before my dad does. Loving this board ! !

thanks! yours too.

tried it today with canola oil and it was delish, i added almond and vanilla extract for my own personal touch and added a bit more splenda but it was great. the rest is wrapped in the fridge in the back behind my cheese for 2morrow. yay!

I made this today. Reminds me of milk chocolate Wilbur Buds! I cut it into 30 squares. Next time I'll have to pipe them to make kiss shaped chocolates. I got approx 50 cal. and .3 gr. carb each.

flossie73, that's such a good question, because I was thinking the same thing as I was blending it last night!

*** I used unsweetened baking chocolate, by the way. I think it had 4 net carbs per square, so I was like, "BOO YA."

I started with 4 packets of Pure Via:



Tasted it. Added 2 more.

So we're at 6 packets.

I did one drop of EZ Sweetz, remembering that Splenda and chocolate are usually not friends.

THEN, I remembered I had erythritol, so I added about 1 teaspoon total.


So, "sweetener to taste" for Cindy equals:
  • 6 packets Pure Via
  • 1 drop EZ Sweetz
  • 1 teaspoon erythritol

I brought some fudge pieces to work today, and boy, can't wait to have my snack!

I keep squares of this in my freezer. Got me thru the holidays when I just needed chocolate. Along with the peanut butter protein fudge from ouizoid.
