Oh my glob, you guys! Best recipe idea ever!!

Boyfriend has been craving jalapeno poppers but he wont' buy them or eat them in front of me since they're breaded (he's such an angel!)

So I had a flash of brilliance this afternoon: take a yellow zucchini (would use green but have yellow) and fill it with whipped cream cheese that has diced jalapenos in it, top it with some mexi-cheese and bake it!!!

Have some good ranch dressing for dipping, too!

I don't know if anyone else has thought of this or done it but I'm hoping it turns out super tasty! I'll let you know!!

That sounds good ! I make my jalapeno poppers by cutting lengthwise, scooping out seeds, filling with cream cheese and wrapping in bacon. Cook on grill or in oven ( oven works best ) until bacon is super crunchy.......they are one of my favorite foods ~~ making them tonight ~~ and very addictive !!!

That does sound scrumptious! We'd have to pass on the bacon, though. Boyfriend is a vegetarian.

I make jalapeno poppers too- I slice the pepper lengthwise, take out the seeds and ribs, then stuff them using Boursin garlic and herb cheese mixed with bacon bits (maybe sub chives for boyfriend?) then top with grated Parm. Broil for 10 minutes or until Parm is brown and kind of crunchy. I think they taste better than frozen breaded poppers (which says a lot because I love those too!)

We loved the ones made with the zucchini! Gave it a depth of flavor and we could overstuff them with the cream cheese :P I could have used jalapenos but we had the squash sitting there and only a jar of pickled jalapeno slices so i figured, why not?

They were totally delicious! Boyfriend ate 4 squash halves!
