Need help with chocolate layer on peanut butter cups

I have been keeping my peanut butter cups in constant supply, mainly for my husband!
He loves them and it is a great way for him to get in some coconut oil. Well, my DD's have decided they love them too, but want a chocolate layer like a Reese's. Not sure the ratio of ingredients to use??


Ingredients I have

Cocoa
SF chocolate chips
Coconut oil
Butter
Xylitol
Truvia


I know there is a recipe in those ingredients, but not sure how much of what.
Anyone make anything like this?

I actually just use coconut oil, unsweetened cocoa powder, and ez-sweetz. I know sucralose isn't the greatest with chocolate, but I don't like using sugar alcohols, but you could use Erythritol. I just do a layer on the bottom, freeze them, then do my peanut butter layer (I use coconut oil and pb2), and lay on top, freeze again. I like everything as simple as I can make it.

Here's the recipe I use. It's really yummy. I'm sorry I don't recall who originally posted this.


Chocolate/Coconut Oil Peanut Butter Cups

4 T. coconut oil

1 ˝ T. unsweetened cocoa powder

˝ tsp vanilla

3 T. sweetener of choice (I like a combo of Sweetzfree & Erythritol)

Natural peanut butter

Mini Muffin paper cups

Melt the coconut oil and add cocoa powder, vanilla and sweetener. Mix until all the sweetener is well incorporated into the other ingredients.

With mini muffin paper cups on a plate, start to fill just the bottom with a little of the chocolate/coconut oil mixture.

When all are filled, put into freezer for about 5-10 minutes, until solid.

Take out of freezer, add a dollop of peanut butter to each up on top of the frozen chocolate and then cover each completely with more chocolate.

Put finished cups back into the freezer, let them get hard again and ENJOY!

Store in the freezer.
