I made a soup that turned out sooooo good...

I made a soup from 3 jars of no sugar added roasted red bell peppers (drained), 1/2 onion sauteed in grapseed oil/butter, 2 cans no sugar added fire roasted tomatoes, about 5-6 yellow squash, chicken stock, and spices. After it all cooked down, I added about a 1/2 container of roasted red bell pepper hummus and a block of softened cream cheese, blended it all together, and seasoned to taste. It was amazing. Even husband loved it. This is really versatile. I did leftovers and added about half with Italian spices 1 can of artichokes. The other half I added in some comino and other mexican spices. The soup is creamy and satisfying. I haven't come up with a carb count, but I ate it much of last week and still lost 23 pounds in 15 days, so it can't be bad. Next time I'll try to get an accurate carb count.

Thanks. Next time I get creative I want to try to make one that tastes more like tomato soup, with the tartness I like. If I can ever come up with a great LC "tomato" soup, I'll be in good shape. Another poster shared hers with me, made with red bell peppers and tomato sauce, but it was too carby for me right now. Hummm...something that would sub for the extra tomato, be reddish, and give that little tangy bite of regular old Campbells. Pumpkin would not be right. Red cabbage I don't think so, either.

I think this tastes just like Campbells:

Old Recipes For Newbies

Wouldn't it be fun to post some old recipes we have been using for years for everyone on the board. Come Monday, this place shoud be full of newbies and come backers. I'll start:

JUST LIKE CAMPBELLS TOMATO SOUP
Ingredients:

1 8 oz can no sugar tomato sauce
1/2 cup water
1/2 cup heavy whipping cream
1pkt splenda

HOw to Prepare:

Mix all together in saucepan. heat and serve.

YUM YUM YUM.

Oh my goodness. I'm going to have to try that. I would have never thought to put in whipping cream.
