Lemon Poppyseed Muffins - Alternative Flavours?

I absolutely adore Rachel Cobb's Lemon Poppyseed Muffins. I wondered if anyone has successfully adapted this recipe to other flavours. I have tried chocolate by adding cocoa instead of the lemon zest and juice but it didn't quite have the same consistency, so I am asking for other suggestions that you might have tried.

Chopped dried prunes or raisins, along with chopped nuts, when you get closer to maintenance. Chopped fresh cranberrries and nuts for now.

I don't make this recipe, but I do make flax muffins for breakfast every day. I must have 30 flavors I rotate, made with a DaVinci/Torani sugar free syrup, an extract, and/or spices. Additions can include poppyseeds, nuts, chopped cranberries, or coconut. cream cheese frosting optional.

really, any flavor you might want is usually attainable somehow with flavorings if you poke around stores and the internet.

Thanks for your suggestions. They are certainly worth trying.

As it is an interesting combination of ingredients, I was hoping to hear more definite ingredients and measures from someone who had used and successfully adapted the recipe to other flavours.

J: Coconut flour is like a sponge and probably required the liquid from the lemons to help moisten it. Cocoa is like flour so it probably would need extra liquid to make the texture come out right..

If you do add cocoa, then you might add extra water instead of the lemon juice or some sour cream..

You might just do the basic recipe and add blueberries..Lemon blueberry muffins sound good as well as lemon raspberry muffins...

Orange muffins would be nice, too.

Like Peggy says I would do cranberry orange and nuts.

I would change
2 T. orange Davinci or Torani syrup (for lemon juice)
1 T. fresh orange zest ( for 1 T. lemon zest)
2 T. cranberries chopped
1 T. chopped walnuts ( for poppy seeds )
1/2 tsp. each of baking powder & baking soda

I think I might try this.I'll let you know how this turns out.
