Pimento Cheese

Does anyone have a good recipe for pimento cheese. I'm in the mood for it and trying not to eat all the crap thats in the manufactured kind. Thanks in advance.

Here's a recipe I just found from All Recipes that had 66 reviews and 5 stars:

Southern Pimento Cheese

Ingredients
2 cups shredded extra-sharp Cheddar cheese
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper (optional)
1/4 teaspoon onion powder
1 jalapeno pepper, seeded and minced (optional)
1 (4 ounce) jar diced pimento, drained
salt and black pepper to taste

Directions
1.Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.

I think I'm gonna make this and have it between two Oopsies.
Maybe grill it, too. Yumsky.

I do an easy recipe most of the time.

A bag of colby and jack cheese shredded (8oz)
1 small jar of pimentoes
mayo to taste
a little cracked pepper

Sometimes I use half mayo and half sour cream.
It's also good with roasted red peppers, chopped - if you don't have pimentos.
You can use stuffed green olives instead of the pimento too, chopped fine.

OK- just made this recipe and it is fabu!

I did make the following tweeks:
- didn't have onion powder so minced a shallot and added that
- had some pepper jack cheese and added a handful of that.
- I blended the seasonings and mayo and cream cheese and just folded the rest in (don't have a big mixer)
- didnt have a jar of pimientos per se, so diced up a 12 oz jar of roasted red peppers from Trader Joes and added that.
- skipped the jalepeno (didnt have)

Crazy delicious, I tell you! Highly recommend!

I love love love pimento cheese, but we make it without mayo so it can sit out. No real recipe, but it's softened cream cheese (8 oz or so), 2 cups or so ofsharp cheddar that has been shredded (or, even better, put through a meat grinder), medium jar of pimentos that have been mostly drained but some liquid retained to make it spreadable, a shake of worchestershire sauce, a few shakes of hot sauce, some garlic salt... mix it all together and let the flavors meld over night.

It's the best, and I do believe I'll be making a recipe tonight.

Yes, it's great on celery or spread on sliced cucumbers or on LC bread or crackers...you can also melt it over anything you want to make cheesy.
