Fantastic! Made it for dinner tonight and I think it will be a great addition to our school night rotation. And I thinned down the sauce a bit and it IS great over broccoli.

I'm trying to think how I can make this a crock-pot meal...

3.3 net carbs per serving

3 chicken breasts
a sprinkle of cumin (I used about 1/2 tsp)
a sprinkle of chili powder (I used about 1/2 tsp)
a light sprinkle of salt
2 cloves garlic, minced
3 jalapenos, seeded and chopped (we are wimps so we just used 1 but I recommend 3)
4 oz full fat cream cheese
3/4 cup chicken broth
3 slices of bacon, chopped
1 TBSP chopped fresh cilantro (can use 1 tsp dried but I don't recommend)
3/4 cup shredded cheddar cheese


Pan fry the bacon until crisp. Remove the bacon with a slotted spoon but leave grease. Sprinkle cumin, chili and salt on each side of chicken breasts and pan fry in the bacon grease until cooked through, flipping half way. Remove chicken and keep warm. Throw chopped jalapeno and garlic in pan and cook for approximately 2 minutes over medium heat. Add chicken broth, scraping and deglazing the leftover yummies in the pan. Add cream cheese and stir in until melted. Add shredded cheddar and stir until melted. Add bacon crumbles and cilantro, stirring through for a minute or so. Spoon sauce over chicken.

The sauce tastes great. I used 2T of canned mild chilies instead of the jalapenos. We're not big fans of chicken breasts, so I may use boneless thighs next time. Excellent recipe.

I made it again tonight, but the easiest version yet. I took a leftover rotesserie (sp) chicken and chopped it up, 5 jalenpenos seeded and sliced, 3 cloves of garlic, 3 piecies of bacon, 4 ozs of cream cheese, 3/4 cup of shredded cheese ( I used Mexican blend), 1 teas better than boullion chicken broth, 1/2 cup of water, about 1 teas of cumin and 1/2 teas of chili powder. cooked the chopped up bacon, sauted the jalepenos and garlic and then added the spices, threw in the chicken and heated through. Then I added the cream cheese and transferred it to another (microwave safe) dish. I added the cheese and microwaved for 4 minutes. Yum!

I made this again tonight! Like I said in a preivious post, I use the white meat in a leftover rotesserie chicken, extra jalenpenos, cumin, and garlic. Yum!!! One of my favorite, quick, go to dinners.... even if you have to cook the chicken yourself!!!

I doubled the sauce and made zucchini noodles and spooned the sauce over the chicken and noodles- very good taste!

I had stashed this recipe in my index and then last week I had some chicken breasts to cook and found this in my search. I cant believe I have never made this, it is FANTASTIC!

I made my sauce a little thicker by reducing the broth and I used a big handful of chopped pickled jalapeno rings since that was what I had on hand.

I served with roasted broccoli and plenty of sauce to go around. My my, DH and I were in heaven!

This was absolutely, hands down, one of my all time most delish chicken recipes EVER!!! This will definitely be a keeper and put into the rotation...

Making this again tonight. Chix breasts were on sale and this is just about the only way I like them! It is a fabulous dinner and pairs so well with roasted broccooli.

Question: How would this sauce be warmed over in the microwave? I'm always looks for spectacular recipes to help me stay on plan when my co-workers are bringing in high carb food. If I have my own delicious meals, then I really don't care one bit what they eat in front of my. Love, love, love homemade Lw carb food.

It's just cream cheese, chicken broth and cheese. I think it would be fine to "warm up" in the micro. Just be careful not to get it too hot or the oil in the cheddar cheese will release.
