ideas for 4th of July desserts

hey guys,
I am going to a 4th of July party and I want to make & bring a dessert for the party. I want it to be something I can eat too BUT not seem like it's a "diet food"-something yummy too of course....

Any ideas?

I just tried Chicken Lady's Carrot Cake and her Chocolate Cake for the first time this week. They are both really good. I also made a variation of her chocolate cake in which I left out the chocolate and added a few mashed up strawberries and a little strawberry extract. It was pretty good too, but not as good as the originals.

I'm planning on making this one!

Key Lime Cheesecake

Ingredients:
3 Tablespoons butter
1/2 cup ground almonds (or walnuts, or pecans)
2 Tablespoons Splenda
1 cup boiling water
1 small box (3 oz) lime sugarfree gelatin
1/2 pint heavy cream
8-oz package Philadelphia Cream Cheese
3 Tablespoons Nellie & Joe's Key West Lime Juice
1 cup Splenda (or mixture of your choice)

For Crust: Melt butter in a pie plate. Press in ground nuts mixed with 2 Tablespoons Splenda. Let chill in refrigerator.

Meanwhile, make filling: Mix water with lime sugarfree gelatin. Set in refrigerator to partially set up. In a bowl, whip heavy cream. Set aside. In a large bowl, beat cream cheese, key lime juice, and 1 cup Splenda until smooth. Very lightly mix in partially set lime gelatin. Fold in whipping cream. Pour into pie shell. Chill 2 to 3 hours.

Top with additional whipped cream if desired.

Serves 10 - Carbs per serving: 4.5

Me, again! I'm also making CarolynF's Chocolate Chip Bars, due to all the rave reviews on her thread!

Chocolate Chip Cookie Bars

--------------------------------------------------------------------------------

1 cup finely ground pecans and walnuts
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 stick of butter, melted
2/3 cup of Splenda
1 teaspoon vanilla
2 eggs, beaten
SFree Chocolate Chips (1/2 cup or more)
chopped nuts (1/2 cup or less)

Mix all ingredients in a medium bowl.

Butter/pam a 8 x 8 pan and pour in cookie bar mixture and bake at 350 until done. It will take about 20 minutes or so.

Cool and serve. I kept mine covered in the fridge.
