Super Easy Glucomannan Faux Lemon Curd
 
Faux Lemon Curd

2 cups water
2 envelopes Kool-aid Lemonade flavor
6 tbs Steviva (erythritol/stevia blend like Truvia)
1/4 tsp white stevia extract (I use Kal)
1/8 tsp liquid sweet 'n low (optional)
20-35 drops liquid splenda (I use Splendex, adjust to suit your own taste)
1 1/2 tsp glucomannan

Pour water into small saucepan on low heat. Add Kool-aide and sweeteners and stir to dissolve. Sprinkle glucomannan a little at a time on top and whisk in thotoughly (I measure the gluc into a shaker can and shake it in a little at a time). Keep whisking while mixture slowly heats up and as it gets warm it will start to thicken. When it reaches desired thickness or even a little less as it will thicken more while cooling remove from heat and let cool. After mixtures it will look a little gloopy so beat it a little with the whisk and it will smooth out and then pour into a lidded container and store in fridge.



I love lemon curd and this is so easy to make and tastes great. It's a little tart like I like it but has a very lemony flavor. I've been spooning it on top of my vanilla yogurt since I started folowing the Dukan diet since it doesn't allow yogurt with fruit bits. I also make a strawberry glaze similar to this is that also good on yogurt.

Here's the strawberry:


Glucomannan Strawberry Glaze

2 cups water
2 envelopes strawberry Kool-aid
4 tbs Steviva
1/4 tsp white stevia extract (Kal)
1/8 tsp liquid sweet 'n low (optional)
1/4 tsp strawberry extract (McCormick)
20-24 drops liquid splenda (Splendex)
1 1/2 tsp glucomannan

Same directions as above.

I made something a little similar a couple months ago and put it in an almond flour crust.

Lemon Custard "tart" on whey protein/almond flour crust:


Ingredients:
2 servings almond flour (1/2 cup)
2 servings syntrax vanilla whey protein powder (2/3 cup)
2 servings great value butter (2tbsp)
2 servings silk almond milk (2 cups)
2 serving Lemon kool aid packets
1 large egg
2 large egg yolk
3 tbsps lemon juice
1.5tbsp glucomannan powder
1-drop EZ sweets for the crust
About 10 drops EZ Sweets for the filling (I just kept tasting until it was as sweet as I like)

Mix protein powder and almond flour well, add 1 drop EZ Sweets, and add 2tbsp melted butter. Mix well. It will be dry. Add a few tbsp of water until it is mixed and workable. Put in an 8" pie pan and spread out over bottom and up the sides. Bake in a 350 oven for about 8-10 minutes.

Put all other ingredients in a bowl, except glucomannan powder, mix well. With an electric mixer, hand mixer, or whisk, slowly add the glucc powder and mix for 2-3 minutes until it starts to thicken up. Pour in the crust and bake at 350 until center is set (about 25 minutes). (You will have left over filling, I baked those in cupcake tins without a crust)

That looks great.

I have thought about using the faux curd for a lemon merigue pie. Jennifer's pie crust recipe that Ginaaa is using might work well but I would probably brush it with egg white and pre-bake it a bit keep the curd from soaking in.


I bought some new Kool-aid flavors this morning. I got Strawberry Lemonade, Peach Mango, Watermelon Cherry and Strawberry Kiwi. I can't wait to use the Peach Mango.

Just made this for my lemon loving grandaughter. Very easy and delicious! I am amazed how well it came out. She's putting it on vanilla ice cream as a topping.

I didn't have any kool-aid, but had a package of lemon jello, and really wanted to try this. I didn't use any sweeteners, just water, jello, and gluc. I was afraid the texture would turn out solid because of the jello, but it didn't - it was perfect - thick, smooth, and no lumps. Love it for toppings.

I was looking thru a low-carb cookbook I've had for a while and I remembered your quest for a vanilla sauce. I haven't tried this but it looks good.

CUSTARD SAUCE

5 beaten egg yolks
1 1/2 cups whipping cream
1/4 cup splenda or equivalent sweetener
1 1/2 tsp vanilla

In a heavy saucepan stir together egg yolks, whipping cream, and sugar sub. Cook and stir continuously over medium heat until the mixture just coats the back of a clean metal spoon. Remove pan from heat.

Quickly cool custard by placing saucepan in a large bowl of ice water for 1-2 minutes, stirring constantly. Pour custard through a fine mesh strainer into a bowl, stir in vanilla. Cover the surface of the custard sauce with plastic wrap, chill 2 to 12 hours. Serve with fresh berries.

Makes 1 3/4 cups

Per serving of 1/4 cup - 226 cals, 23g fat, 3g carb, 0 fiber, 3g protein.

Thanks so much for posting this wonderful recipe! I just made the peach/mango sauce this morning and it was Delish!

It is really an inexpensive way to make sauce/jam! And I can't detect a chemical taste either!

BTW, how is the Dukan diet going for you? I am considering it myself, with modifications of course! :sing:

Mostly, I plan on adding a little more fat. After all these years (and not going anywhere) on Atkins I need something that will give me results!

I'm thinkin Strawberry Frozen Yogurt for desert! :D

I made the faux lemon curd tonight-it's really yummy. I'm not sure what to do with it besides a topping on yogurt. Any suggestions?

Well, a few ideas come to mind:

You can use the faux curd (any flavor):

as toppings (icing) for muffins

In crepes with cream cheese and sweetner

In muffin batter to create a flavor

as jelly on a LC biscuit

as syrup on a LC pancake

to flavor a hot breakfast cereal of your choice.

to replace your other LC syrups (cost saver)

So far I've made peach/mango, lemon, strawberry, grape, cherry, mixed berry, and lime!

Gotta love it!

Glad you like it and those other flavors you have made sound wonderful, I need to try some of them. Last night I pulled the bowl out of the back of my fridge that still had about a cup of faux lemon curd that I made when I first posted this recipe and I was happy to find it was still good.

As for the Dukan diet I decided that wasn't the best plan for me so I've went back to Atkins but unfortunately I've been off plan for the last couple of weeks so now it's time to get back on track.

Well that's a hard question! I keep them made up in the frig and take a glop out when I eat Greek Yogurt! But, I have to say I :heart: the peach mango!

If you could afford the carbs, I believe a diced peach with some peach mango curd/sauce and some whipped cream on top would REALLY hit the spot! :jumpjoy:

Didn't have lemonade kool- aid. but did have a small box of lemon jello. so used that as sligh did, it was easy and smooth, no lumps, but didn't have much flavor, so I guess I should have used the big box. Putting the kool-aid on my list and will try that next time.................. Love how fast it is to make........................ Ann

Thanks-off to grab some peach mango koolaid. I have some strawberry koolaid already and have that on my to do list. I actually picked up a cheap bag of frozen peaches yesterday at 99 cents only store. They also have frozen strawberries.

I use the Strawberry Glaze on fresh cut up strawberries for strawberry shortcakes. It taste so much better that the glaze you buy in the produce section.

This is really delicious-i spooned a big portion on top of 1/2 cup breyers low Carb vanilla ice cream......soooooo good!

It is pretty tasty and really easy but alas I cleared out all the Kool-aid from my cabinets in my recent processed-food purging. Also gone is the liquid splenda, sweet 'n low and most artificial flavorings.

I don't do processed stuff either. I don't see why you couldn't use some fresh lemon zest or lemon oil and a bit of citric acid for tartness.

I guess I should say I don't do processed stuff with the rare exception. I've tried many times, but can't make a s/f maple syrup taste as good as Walden Farms.
