Peanut Butter Cups
Hi guys ... Happy Father's Day!!
I am sure there is a recipe similar to this, but I thought I'd share my version of peanut butter cups.
Yummy Chocolate Peanut Butter Cups
The coconut oil is so good for your body, inside and out! They taste like a dark chocolate version of Reesee Cups!
14 Tbsp. coconut oil (melted)
4 tsp. unsweetened cocoa powder (I like Dutch)
Liquid sweetener to taste
8 oz. unsweetened chocolate (bars or Bakers squares)
No sugar added, natural peanut butter
In a bowl put the chocolate bars or squares and 4 Tbsp. coconut oil, and microwave for 2 minutes, then mix and set aside.
In a larger bowl mix the 10 Tbsp. oil and 4 tsp. cocoa powder. After mixing, add the melted mix. Mix well and then add the sweetener.
Sit 28-30 paper mini cupcake liners on a plate or cookie sheet that will fit in the freezer. Put 4-5 almond slivers in the bottom of each cup, and then add a small amount of the chocolate mixture to the bottom of each cup and stick it in the freezer for about 15 minutes.
Pull them out and add a nickel sized dollop of peanut butter to each cup. Then top all with the remaining chocolate mixture and put in the freezer. Once they are frozen, throw them in a large freezer bag and store in the freezer.
Warning ... because of the coconut oil the chocolate will be melty and slippery and ooey gooey on your fingers while you eat them ... so keep a napkin on hand.
I eat 3 of them and it is really like a meal! You will be full afterwards! Protein from the peanut butter, fiber from the nuts and all of the goodness of the coconut oil make these a fantastic treat or meal replacement!!
Approx. nutritional info per cup: 151 calories, 4.3g carbs, 2.1g fiber, 0.9g sugar, 3.2g protein.
