Ginger Pork Crack Slaw...
I had to share my dinner last night.. this is my new fav. LC meal!
It's for OWL levels and makes a HUGE batch (about 6-8 large servings) that freezes well:
Ginger Pork Crack Slaw
1 large or two small cabbage
1 bunch green onion
4 cloves garlic - chopped fine
3 tbsp grated ginger root
1 lb ground pork
2 red bell peppers
˝ small head broccoli
2 small carrots
3 T coconut oil
1/2 C soy sauce
2 T rooster sauce (Korean hot sauce or just add red pepper flakes to taste)
1/3 c (or to taste) Ideal brand brown sugar
2 t toasted sesame oil
3 T sesame seeds
2-3 T water as needed
Process all veggies in food processor on shread.
Grate ginger by hand (I use lots but I LOVE ginger)
Chop garlic fine.
Warm coconut oil in large Dutch oven with a lid and cook veggies about 30 min.. stirring every 5 or so minutes.. on low, covered, till reduced by about half, make a small spot on the bottom of the pan and throw in ginger.. saute' a bit and then mix in with the rest of the veggies.
In the mean time cook the ground pork in another pan.
Wisk the soy sauce, sesame oil, rooster sauce, garlic and Ideal brown sugar.. (you can find this at Netrition) in a bowl and pour over veggies..
I added meat last.. and put the lid on … put it on low and simmered about 20 min.. this stuff was incredible.
Made this way it's pretty spicy, gingery..
You of course can downplay the spices for your taste if you need.
