Almond Butter Bread

I found this recipe on the 24/7 Low Carb Diner website. There's another version that uses peanut butter called Mr. Peanut Bread too, but I like this version for sandwiches. It's the easiest and best tasting bread substitute I've tried. It makes great toast with butter and sf jam also. I sliced the loaf in half the short way and then sliced each half into 4 slices the long way. So, I ended up with 8 bread sized slices, enough to make 4 sandwiches. I made a Chicken BLT for lunch. The bread held together great!!

Almond Butter Bread

1 cup almond butter
3 eggs
1 Tablespoon vinegar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 packet stevia (optional)

Blend almond butter and eggs until smooth. Add in remaining ingredients. Pour into a sprayed 8 1/2" by 4 1/2" loaf pan and smooth the top. Bake at 350 degrees for 30-40 minutes. Let cool before slicing. Can also be baked in muffin tins for slider buns.

I made my own using blanched almond flour. I just used my food processor and added some macadamia nut oil, just kept adding a small amount until it was a smooth consistency. I think I used about 1 1/2 cups of almond flour to get 1 cup of almond butter. Here's what it looks like when it's done. The bread has some cracks on the top but slices easily. It's about 2" tall. I will posts some pics showing how I cut it after it cools. I made another loaf so I could try freezing it and see if it holds up well after freezing.
You can use store bought almond flour, I didn't have any but did have almond flour so I decided to try making it myself.

You're welcome. This bread is almost too good!! lol I just had a slice with almond butter and sf jam.I had an idea to make rolls with it, using my muffin top pan. Here's pics showing the bread cut in half and then each half gets cut lengthwise into 4 slices.

LOL When I make this bread I'm always amazed it makes bread.

Some have made it into waffles for bread . Yours looks beautful.

That looks good. I'm amazed it turns into bread too. I looked at it again to make sure it didn't say almond flour.

I've had the recipe using peanut butter for a long time but was never motivated to try it for a sandwich bread. When I saw the almond butter version I though it would make a better sandwich type bread but never thought it would be this good. I can't wait to try it other ways!!

Oooh, I will definitely make this. I have some almond butter in my pantry that I got on clearance!! That sandwich looks so good. And to have a BLT again----my oh my!! I love it when you post pictures of your creations. They are lovely.

Thank you, I'm glad you like my pics!!

I'm thinking it would be easier to make it in muffin top pans that way I wouldn't have to cut it up. Can be kinda frustrating trying to cut it evenly. Doesn't take away from the taste or texture though and it holds up great on sandwiches and is awesome toasted. I will never be without bread again!!

I'm wondering if it would make good garlic bread or could be used as a pizza crust. So many possibilities!! lol

Why are you using almond butter instead of peanut butter? Does it taste better? I want to try this for a BLT sandwich. But its cheaper to use peanut butter.. I am now wondering which to use. I too have a muffin top Pam and will use that.

I used almond butter because it has a more neutral taste. Let us know how it comes out in the muffin top pan.

Thanks for the recipe. I remember the Mr Peanut bread but I wasn't crazy about it.

This bread you made looks lovely. I'm going to make some today. You did great pics too...visuals are so nice. I have a jar of almond butter and sunflower butter so I'm going to use the premade. I do have almonds if I don't care for the way this jar type turns out.


I can't wait to try this...You sammy looks so good.

Also, the muffin top idea is great too for a bun...hmmm...seems the possibilities are great with this recipe.

It's a great recipe and using almond butter makes for a grear sandwich bread. If they work in the muffin top pan it would make things easier. I'm sure the almond butter in the jar will work great too.

I am confused here, you said you can use store bought almond flour, you did not have any so you used almond flour. Did you mean blanched almonds and you made your own flour?

I've only made it with almond butter. But I love your idea Gina. The almond butter does make it more nuetral.

Okay, almond butter on my Trader Joes list. Does it matter what kind of vinegar? I love love love apple cider, but it may not make it a neutral flavor. And does anyone have a carb count per slice counting 4 slices per loaf or even per loaf?

Tilly, I used regular vinegar because it didn't specify and I didn't want any weird tastes. I'm not sure how the ACV will taste in this bread, maybe someone else knows. I haven't figured out the carb count but I ate at least 4 slices yesterday and it didn't raise my bs at all.

It does make it the perfect size Jennifer, but it's hard to cut them evenly that way. I'm thinking in muffin top pans would be good for roll type fillings and I may just cut the loaf into smaller slices for sandwiches.

Would it work if you doubled the recipe to make a taller loaf? I know some recipes cannot be doubled, just wondering about this one.

I havr no idea if it would bake right or not, but on the web site 24/7 low carb diner, she mentions baking it on a cookie sheet for an artisan type bread. I may try that next.
