Cream cheese = cheese cake!!

I live in a place that has a 'dairy board' which dictates the prices. Long story short - cream cheese is about $4.50 per 250g (or 8oz.) and I don't buy it much. BUT it is on sale this week for $2 and I am going to splurge and make a great big old cheese cake - breakfast, lunch and dinner for days!!!

So here is my question - I used to love the graham cracker crust almost better than the actual cake part and I wonder if anyone can suggest a reasonable facsimile that doesn't use any type of wheat?

My opinion is almond or pecan crust. And you will love it as much.Just put it on the bottom and use beachgirl's cheesecake recipe. Sorry they're all great, whatever recipe you use.

Sorry you have a dairy board. But we ( in the states) can get it on sale during holidays. $.99 Normally it's about $2.50 for 8 ozs. It last for months , so buy more.

I have only tried one crust, but it's the only crust I ever plan to try. SO GOOD.

I use this crust all the time and we love it.

1 1/2 cup almond meal
1/2 cup flax meal (or whatever else you would like)
1 stick butter 4 oz melted
1/4 cup splenda (more if you want)
1 egg white

Mix all and together like you would a graham cracker crust. Bake at 350 till golden brown and crusty.

I could eat this by itself!! As a matter of fact I just made this crust and melted S/F chocolate chips on the hot crust and topped with more ground nuts.
