Stats: 4'10 and 170/115 (5 or so pounds up or down)
WOE: Atkins
Start Date: April 2004
4 individual chocolate chip cookies

These are really good.

Ingredients You Will Need

-1 Tbsp. ideal White
-1 Tbsp. diabeti-sweet Brown sugar or ideal brown
-1 Tbsp. Butter
-1-2 Tbsp. s/f Chocolate chips
-1 Tbsp. Water
-1/8 tsp. Vanilla
-Pinch of salt
-Pinch of baking soda
5 tablespoons carbquik (you could experiment with another bake mix)
Toaster Oven (not microwave)

Mix all ingredients in a bowl with a fork, divide the dough into 4 approx equal balls kneading a bit till smooth. Bake in toaster oven or regular oven at 350° for 9 minutes.

I covered the pan with non-stick foil but you could just spray it. Boy these were good and just enough that it satisfied my sweet tooth. It has no eggs and its even good eating it as cookie dough and safe because there are no eggs

I also believe splenda wouldn't work because the ideal or the diabeti-sweet has the synergy like real sugar for sticking power but you could try and let me know.

For this cookie you will need:
-1 Tbsp. White granulated sugar
-1 Tbsp. Brown sugar
-1 Tbsp. Butter
-1-2 Tbsp. Chocolate chips
-1 Tbsp. Water
-1/8 tsp. Vanilla
-Pinch of salt
-Pinch of baking soda
-1/4 Cup Flour + 1 Tbsp. Flour

This is the original recipe. It calls for flour which to me carbquik is the closest low carb substitute I know. I have no problems with carbquik and haven't been able to find all the ingredients yet for Jennifer's gluten free bake mix.

Try this with one of the other bake mixes and post your results.

I made a batch of these to take to a family reunion yesterday, so I'd have something sweet to nibble on while avoiding a full table of sugar-filled cakes, pies, etc.

These were very easy to put together and tasted great. The only change I made to the recipe: I used 3 T. carbquik and 2 T. almond flour in place of the 5 T. carbquik.

Thanks Skeeter!

That is great! These are very fun. These would work most likely for other bake mixes but maybe not ones with coconut flour as coconut flour requires eggs and these have no eggs in them.
