For my first time I followed the recipe as it was written. It was dry a little - I cooked them too long, but a tasty filling bar. I am planning on keeping them to eat prior to my bike rides.

Next time I am going to add some stevia and blueberries and cut the flax in half and add some coconut flour. I'll let you know how those turn out. I might try some protein powder, but I've never baked with it and am not sure how the texture would be. Will have to try that next.

Thanks for sharing your recipe. I love the chunks of macadamia nuts.

Ok, I ended up using:

2 eggs
1/2 cup flax meal
1/2 cup almond meal
1/2 cup unsweetend coconut flakes (bob's red mill)
1/3 cup NOW brand soy nuts
1tbsp pumpkin pie spice
About 1/4 cup Cookie Dough DaVincis
and 100g dried strawberries
1tbsp gluccomannan powder

It made 12 huge bars, they are really really good. I left out the coconut oil and added the glucc to reduce calories a bit. You can't really taste the strawberries at all, the blueberries were better. I think Strawberry syrup or peanut or almond butter would be better. I dried them out purposely so I can travel with them and they will keep.

Yummy and filling.

I made these tonight used all flax, blanched slivered almonds, coconut flakes, and 2 squares unsweetened bakers chocolate. I added butter instead of coconut oil, sweetened with ezsweetz, some Splenda, and some brown sugar sweet n low I found at the grocery. These came out almost like a brownie. Topped with some homemade whipped cream with some espresso added in...Yum

OMG, that sounds positively evil! I'm going to have to play with that sometime!
