Sausage gravy over waffles

An earlier post about how to make milk gravy got my stomach rumbling so I just whipped this up for lunch.

I cooked 6 turkey breakfast sausage links in a pan then removed them to cool. I added about 2 tablespoons of coconut oil to the pan and after it was liquid added 2 heaping tablespoons of tapioca flour to make my roux. The tapioca flour never did brown (I'm still experimenting with it). I then added 2 cups of 2% milk to make the gravy. While that was heating I minced the sausage using a bullet knock-off I got from Aldi and added the finely ground sausage to the pan along with some extra sage and some salt. I didn't time it, but my guess would be about 4 or 5 minutes later the gravy was thick enough to deserve the name. Now it wasn't the wallpaper paste some people call gravy, I like my gravy a bit on the thin side.

I then made the waffles with the following mix:

1/4 cup flax meal
1/4 cup wheat bran
1/4 cup tapioca flour
1/4 cup coconut flour
1/4 teaspoon salt
1/2 tablespoon baking powder
1 cup 2% milk
1 egg
2 tablespoons oil
(usually use light olive, but used soybean today, it was handy )

Mix ingredients then let sit for 5 or 10 minutes for the liquid to be absorbed. Thin with water or more milk to desired consistency (I like it about like thick cooked oatmeal). Bake the waffles 5 minutes (at least with my waffle iron). The tapioca makes for a very thin, hard glaze that makes the waffles come out easy as pie.

Tapioca flour has 26g of carbs per 1/4 cup!

Sorry about that folks, I guess this isn't apropos for a low carb forum then...

All I can tell you is that it doesn't make my blood glucose spike.
