Anyone add peanut butter to the clouds themselves (in the blending process)?

Also, I have the ingredients to make (more ) cc clouds but I didn't set out the butter and cream cheese...can you soften in mw?

I soften butter and cream cheese in the micro, but very slowly and check often so as not to make it melt. I'll put a stick of butter on a plate and use power level 1 for 30 seconds and then check it. Usually it starts melting on the bottom first, so flip it over if more softening is needed. Ditto for the cream cheese.

The Truvia in a jar doesn't measure the same as the packets. It's more concentrated. It's written on the side of the jar. This is what mine says:

3/4 teaspoon equals 2 teaspoons of sugar or 1 packet

I made cc clouds with peanut butter instead of butter last night. It was pretty good for a change. Cream cheese, 1/2 c pb, stevia, vanilla...optionally rolled in unsweetened coconut or chopped nuts.

tried these last night.

replaced the 3/4 cups of splenda with maybe a 1/4 cup (probably even less..like a dozen small packets) of stevia and also replaced vanilla with peppermint extract.

Not bad.

I didn't love them but I did enjoy them (ate 5 in one shot). But I verylikely didn't use enough stevia.

I doubled the recipe and used a cinnamon roll flavored frosting creation packet and subbed coconut oil for the butter and added banana flavored davincis and rolled in coconut flakes. It tastes like cheescake bites.

Thanks for posting that recipe Kathy. I made a batch and have them in the freezer.

I also love the qutoe you have posted about wishing you had started today. I need to print that out and put it on my freezer.

May have to try these this weekend! I'll be visiting my Mom and she wants me to share with her some low carb recipes. I like the idea of using the sf koolaid packets for the flavoring!
