Homemade Graham Crackers
 
I made these today and they are yummy. They tasted like cinnamon graham crackers to me. I ate a couple with peanut butter and they were delicious. I forgot to prick the dough with a fork before baking so they don't look like graham crackers but it didn't affect the taste of them. LOL

I found the recipe on Carolyn's website called, All Day I Dream About Food

Homemade Graham Crackers

1 1/2 cups almond meal
1/2 cup flax seed meal
1/4 cup granulated erythritol
2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp salt
1 large egg
2 tbsp melted butter
1 tbsp dark molasses
2 tsp vanilla

Preheat oven to 225F.

In a medium bowl, combine almond meal, flax seed meal, erythritol, cinnamon, baking powder and salt and mix well.

Add in butter, egg, molasses and vanilla and stir until a cohesive dough forms.

On a large cookie sheet, roll out into a rough rectangle between sheets of parchment paper to desired thickness. Can be made very thin, but make sure that it is of even thickness all over so the edges won't burn before the middle crisps up.

Remove top layer of parchment. With a sharp knife, score into desired size of cracker.

Bake one hour or until firm and edges are crispy. Turn off oven and leave crackers in oven another half hour to an hour.

Makes 20 2-inch squares. Each graham cracker has a total of 5.2g of carbs but only 2.8g if you subtract erythritol.

How'd I miss those on Carolyn's site? Those look DELICIOUS! Gina, I'm curious, do they get real crisp so you could use the crumbs for cheesecake crust and such?

Hey guys to answer your questions, yes they did crisp up very nice and taste awesome!! I baked them for about 10 minutes at 225 then turned oven down to 150 and baked for another 15-20 minutes. The outer ones were done sooner I just kept checking them and they did crisp up more after I took them out. I shut the oven off and let the crackers sit for a while too. I rolled mine out thinner than she did, because I got more than 20 2 inch crackers, more like 35..didn't count exact but counted past 25 anyways. :)

My cousin came over for lunch today and she tried them and loved them. She doesn't eat low carb either. She liked LindaSue's lasagna and The Chicken Lady's carrot cake also!! LOL She was lucky enough to try the cinnamon rolls and almond joy bars too. She left stuffed!! :yummy:

I sent her home with more of the above as well as some of the kraft deli deluxe cheese crackers which she thought tasted like cheeze its. She got home and said her kids were fighting over them and one asked if I got the recipe from the cheeze its box. :hyst:

You're welcome, I think they would make a nice crust for cheesecakes. If I had any cream cheese left I would make one. Will be making more though to try it sometime soon.

Well I get so excited when I get to share all these low carb goodies. My offerings were probably too many but she didn't complain so I guess it was a good thing!! LOL

She said her hubby loved the graham crackers and carrot cake that she brought home, and her two kids were fighting over the cheese crackers. Her youngest asked if I got the recipe from the box of cheese its. :hyst:

I made some more of these today because my cousin loved them so much and keeps asking me to make them again. They're really easy to make anyways. I have to admit I really likes these a lot too. I can't believe how crsipy they get. I used sf honey this time in place of the molasses and they taste just as yummy.
