Jennifer Eloff baking mixes?

Since I don't have to worry about gluten free but do worry about low carb.

Which of her bake mixes are more low carb?

The regular one or the GF one?

And are they interchangeable

Splendid Low-Carb Bake Mix is lower in carbs and you can use it instead of the Gluten-Free Bake Mix - just read the instructions below the GF Bake Mix in the cookbook. Very few recipes need my bake mix - only the baking and desserts in my section. Basically, you need a bit less of the Splendid Low-Carb Bake Mix - like a 1/4 cup less in recipes using more than or equal to 1 cup bake mix and 2 tbsp less in recipes using less than 1 cup. Hope that makes sense.

By the way if you use almond flour instead of almond meal in my GF Bake Mix, it is actually 4.8 g of carbs per 1/4 cup and the Splendid Low-Carb Bake Mix is 3.3 g per 1/3 cup; not a huge difference. Using almond flour in the bake mix gives a yield of 3 cups vs 2 1/2 cups.
