Yummiest Summer Salad Concoction...
A couple months ago, DH and I ate the yummiest chicken salad. Since then, I have replicated the formula with lots of different ingredients, and it is just so delish. I am eating one tonight and wanted to share. It is the best during the spring and summer months, when you can get fresh, local ingredients.
Choose your favorite salad greens (spinach, romaine, spring mix, baby kale, etc)
Protein of choice
Finely diced fresh fruit of choice (some favs: apple, pear, grapes, berries)
Finely diced onion (vary between red, sweet or yellow)
Smelly cheese (crumbled bleu cheese, garganzola, shredded parm)
Crushed nuts (walnuts, pecans, macademias)
Drizzle with the best evoo and balsamic vinegar you got.
Tonight is chicken and shrimp over mixed greens, with grapes, sweet onion, walnuts, garganzola, and bv and evoo. The vast majority of your plate is protein and green- the other stuff is added just enough, and diced up, so you can get some with each bite. Out of this world.

Thanks for your basic "salad formula", and options for changing it with varied ingredients. It will be fun adding other favorite ingredients when they are available, and also changing the dressing on occasion. The skies the limit on this salad!
