Mexican crack slaw two ways- two meals

I made a double batch of crack slaw with mexican spices last night, and ended up with two meals, easy peasy and easily served to non-lc family members as well.

I started with two pounds of ground beef and a chopped green pepper and onion, browned until beef was cooked. Added an entire sliced up head of cabbage, but you can also use the bagged kind. Seasoned well with cumin, coriander, garlic, salt, pepper and paprika.

Last night I served it as is for me and husband, and wrapped in tortilla shells for my boys. Garnishments to choose from: fresh chopped jalepeno, cheese, salsa, sour cream. Yum!

Tonight, the other half is the base for taco soup- going to add beef broth, a can of tomatoes and some beans. Heat through and 5 minute dinner is served. The boys love to crunch up lots of chips in theirs. Easy, cheap ingredients and delish!

Yum! Sounds awesome! Don't forget you can also combine it with beaten egg and add a bit of soy sauce and you have Egg Foo Young as well!

I did something like that just last week for dinner, but without Mexican spices. It was good, too. I'll have to try your spices in it next time!! I'm doing a lot of cabbage stir-fries now that I'm doing JUDDD/LC. Thanks!

Bumping this thread- just did this again Monday night and last night. Monday, I made a double recipe of crack slaw with chicken and broccoli slaw, seasoned with Mexican spices. My boys made it with burritoes- beans, cilantro, cheese, etc- I had it plain.

Last night, I used the other half for Creamy Southwest Soup. Delicious, and super easy.

Esther I used Cheri's Creamy Southwest Soup recipe. Broth, rotel tomatoes, ground beef, and cream cheese. I used the chicken instead of the beef and added the broccoli slaw too. So good!
