I just recently discovered Chia, and decided to try and make some Chia Pudding for my 'sweet tooth' tastes a little like Tapioca and is rich in fiber, would defintely make it again!
Chocolate Chia Pudding:
-1 Cup Unsweetened Vanilla Almond Milk
-1 Tbsp. SF Vanilla Creamer
-2 Tbsp. HWC
-1/2 Tbsp. Dark Cocoa Powder
-3-4 Packets Splenda (or other AS)
-3 Tbsp. Chia Seeds
Place milk, heavy cream, creamer/vanilla, and cocoa into the blender and add sweetener to taste. Blend until cocoa is completely incorporated (I used my magic bullet).
Pour milk mixture into a bowl and add the chia seeds. Stir well, making sure that all the seeds are moistened. Stir periodically (about every 15 minutes or so), breaking up any clusters that form. Allow it to stand in the refrigerator until the pudding has thickened and all liquid has been absorbed, at least an hour. I let mine sit overnight. Top with Whip Cream if needed!
Im going to try a coconut flavored one soon...
I divided this recipe into 3, and it was about 135kcals per serving with 2.5g net carbs.
