Avocado Recipes?

Hi guys!

Just wondering if anyone has ideas for using avocado. I've really only used it for guacamole, but I'm not sure what to dip in it now!

Or, does anyone have any other yummy ideas? I saw something for deviled eggs, which isn't my usual thing, but makes me wonder what else is out there!

You can have guac - just dip celery stix, cucumber rounds (crunchy yummy good!), pork rinds, instead of tortilla chips.

Some people have made chocolate pudding with avocado. I haven't tried it. I have recipes for avocado cookies and truffles, which I also haven't tried, but they sound intriguing.

We also like it as a condiment for many things - I dice it into cubes, then we sprinkle on soups (posole especially!), chili, butter chicken, etc.

Or just have it by itself or with your steak or chicken dinner. I love sliced avocado.
In other cultures, avocado is used as a sweet and not just as a savory dish so try it in sweet applications. Its awesome in shakes so I bet it might even make a nice ice cream.

I also read a blogger suggest that avocado could be used in lieu of banana in shakes and baked items.

My teen daughter's favorite thing to do is eat it straight out of its skin. Slice it in half and twist so it releases from the pit and dig in with a spoon.

I like to slice it for tacos or a variety of sandwiches/burgers. It's also fantastic in a greens only chopped salad. You could also blend it up with some vinegar/oil/spices to make a salad dressing.

I've tried a chocolate pudding recipe with it. Note, you want a soft/ripe avocado so that it gets creamed without being grainy or lumpy. (I didn't like that pudding, but I think it was mainly that it was slightly bitter and grainy.)

If you google the California Avocado Commission, you will find lots of recipes. Some might have to be modified for low carb.

I like them with just chopped tomatoes. Chop the avocado and tomato the same size chunks and mix together.

Sliced on anything savory works also.

I add to shakes like several PPs mentioned. I particularly like it in a strawberry smoothie.

Add soy sauce to the "well" from removing the pit. Very good.

Mash with egg yolks, chili powder, cumin, etc. for a variation on deviled eggs.

Love a good cobb salad. One of our favorites!

I usually just smash the avocado, add salt, pepper, mayo or sour cream and a little olive oil and blend it all up together. It's nice and creamy and great on a plain greens mix salad. Fresh cilantro is great with avocado too.

I sometimes add it to my ranch dressing - to make a copycat of Chili's Avocado Ranch Dressing. Its good on a burger!

I have six avocados on the counter that I bought at Costco last week Wed. or Thurs. - wanted to have some in our posole tonight and they are STILL not ripe enough to cut!

We always keep a couple of avocados on the counter. DH likes to slice them and put them on a sandwich or a wrap along with lettuce, tomato, red onion, and deli turkey or roast beef. I make a lot of chimichangas, quesadillas, and Baja fish tacos and I always include sliced ripe avocados on these dishes.

Avocado-mango salsa
Avocado martinis or margaritas (Yes, really, they are amazing! Google how to make them.

This is pretty simple, but I peel the skin off (of 1/2 an avocado), cut them into wedges, crescents, and cut some cheese into cubes, and eat that as a snack. With half an avocado and about 2.5 ounces of cheese (cheddar, or as I like, pepper Jack), it's 2.8 net carbs, 6.7 grams of fiber, 39.1 grams of fat (the good kind), and 20.3 grams of protein! And it's filling, and most of all, delicious!

This stuff is SO good - on anything.

Pureed Avocado with Garlic and Tarragon


Great with chicken or seafood and any leftover is great as a sandwich spread.

1 ripe avocado
1 small clove garlic, minced
1 tablespoon fresh lemon juice plus ½ teaspoon for sprinkling over the puree
1 tablespoon olive oil
¼ cup fresh tarragon leaves
Salt and pepper to taste
2 tablespoons heavy cream

Halve the avocado, remove the pit, and scoop the flesh into a food processor. Add the garlic, 1 tablespoon of lemon juice, oil, tarragon, salt, and pepper. Puree the mixture for 30 seconds, or until smooth. With the motor running, add the cream and puree for another 15 seconds. Sprinkle the remaining lemon juice over the puree to prevent discoloration.

Makes about 1 cup

We cut them in half and put an egg in the depression and bake at 350 for about 10 to 12 minutes . It is very good .

They will ripen quicker if you put them in a paper bag.

I make a shake with avocado for breakfast sometimes. Yummy!

1/2 avocado
1 cup unsweetened almond milk(or coconut milk)
2 tbsp cocoa powder
Liquid stevia to taste
Splash of vanilla extract
Ice cubes
