Reuben Casserole
 
I transformed my leftover corned beef from Saturday into a delicious reuben casserole, including a homemade, sugar free thousand island dressing that would be good on salad, too. Both recipes follow:

Thousand Island Dressing:

In a bowl mix...
1/2 cup mayo
2 tbls Heinz reduced sugar ketchup
1 tbls sugar free sweet pickle relish (i.e. Vlassic)
1/4 tsp white vinegar
Dash onion powder, salt, pepper

Reuben Casserole
1 lb leftover corned beef, diced into 1/2 inch cubes
1 pint (16 oz) jar sauerkraut, rinsed and drained
6 oz shredded Swiss cheese
1 recipe of above Thousand Island dressing (or about 2/3 cup dressing if using jarred or a different recipe)

Mix all together in a big bowl. Transfer to a 2 quart baking dish. Bake at 350 for 25 minutes.

For the rye flavor, a few caraway seeds could be added, or some might opt for a few rye bread croutons if it fits in your WOE.

Next time, I think I will layer it: kraut, 1/2 the dressing, beef, 1/2 the dressing, cheese.

This sounds really good! Have to get the kraut tomorrow. I'm finishing off my very first corned beef and am enjoying the heck out of it. Made it in the crockpot and it is quite tasty.

I tried the reuben casserole last night :). I layered mine as you suggested at the end of the recipe and it was very nice. I liked the thousand island dressing too!

When I made the corned beef I put some very small baby carrots in for DH. He ended up not wanting any of the corned beef, so I used the baby carrots in the casserole and that worked out well. I used the carrots right under the top layer of cheese. Since I had the carbs from the carrots, I didn't eat as much of the saurkraut to even things out a little.

Was very good. Thanks for the recipe. I really like ranch dressing, but this thousand island will be a good change up for summer salads.

Mobear, thanks for the review! I typically don't like 1000 Island on salads. But it makes an excellent sandwich and burger topping. I thought about putting some leftover carrots in, too, but they were really salty from being cooked all day with the corned beef.

Do you think this would work? Layer beef, sauerkraut, cheese and repeat. Then serve the
dressing on the side after the casserole is baked?

I would put the sauerkraut on the bottom because it forms a denser layer. I think putting the dressing on the side is a really good idea.


BTW my DH didn't adore this recipe. He's never had a reuben sandwich and has to be "in the mood" for kraut (even though I rinsed it thoroughly he found it too tangy, which may have been from the dressing). I, on the other hand, ate half the pan to myself.:o

I had company for supper last night and served this casserole. It was a big hit, I think next time I make it I would also serve the dressing on the side. I canned corned beef and at the time, had no idea what I would use it for, now I do. This is a keeper, thanks for the recipe............Ann

Just wanted to add to my previous post that I'm now on the lookout for corned beef on sale :laugh:. Figured I would cook and then freeze part so I can make a couple of casseroles.

I also love the thousand island dressing. I usually buy ranch or bleu cheese but want to get away from the commerically bottled stuff. It has soy oil and usually HFCS. I make my own mayo with light olive oil and a small amount of coconut oil, so I'm going to use that for my next recipe of thousand island. Thanks a bunch for that recipe too :)

I am adding this to my dinners to try folder. I think I might get bread for my hubby to eat with it -do you think it could be put on slices as a sandwich... or maybe an open face sandwich?

Yes, you can cure your own, but you need a special salt to get the pink color, otherwise it is grey. I have not done it, but it is basically a simple brine with some spices (like a BBQ rub, everyone has their own secret formula), but if you goggle homemade corned beef you will get a couple of recipes. I've not dodne it, but it sounds pretty easy.

Corned Beef Alex Haas
2 pounds stew meat
1 cup pickling salt
1 cup water
4 teaspoons black pepper
3 tablespoons ginger
2 teaspoons ground cloves
4 bay leaves
4 tablespoons sweetener
1 teaspoon nutmeg
2 teaspoons paprika
4 teaspoons mustard seed
1 teaspoon caraway seed
4 tablespoons garlic powder
Bring everything except the beef to a boil. Remove from the heat and let cool to room temperature. Place the beef in a non-metal container. Pour the liquid over and stir. Refrigerate for 7 to 10 day, stirring every two days.
Remove the meat from the brine. Throw the brine away. Cover the meat with water and bring to a boil. Repeat two times. Cover with water a fourth time, bring to a boil, and then simmer for 1 1/2 hours.
