I made these again in a lemon/poppy seed version and they were another hit! I love how versatile this recipe is.
I was actually wanting something savory and digging around in the spice cabinet. The poppy seed jar had the recommendation for a lemon extract addition to a cake mix and, well, the rest is history.

I am making these every week in some kind of variation--today I made banana bread for the hubs--two big loaves and I knew I would be tempted so instead I mashed up two small bananas and added banana extract to these muffins for me along with some pecans!! they did end up baking a little bit longer but my they are even more moist than before and I am totally sold on these little muffins---can't thank Carolyn enough for posting these-so few carbs for such enjoyment!! plus easy peasy!! my type of recipe!!

My dh ate 3 of these for breakfast this morning..But, only 300 calories, so I didn't say anything..LOL.

I like them "just done"..much moister..

Lemon poppyseed sounds great..

And a grated carrot might be nice to make carrot cake ones..add some walnuts.

I've been eating these for almost 10 years. Well, not since February, because I did induction again, but I'll be adding them back to my menus soon. I usually use DaVinci's banana or blueberry syrup and cut the water and extract back some. I make 24 at a time and freezer them in a gallon freezer bag, then just pop a couple in the nuker for breakfast. If DH and I are taking a road trip, I throw a few in a ziplock and let them thaw on the way. They get a little sticky from freezing, but that just enhances them, IMO. I never actually knew who Dobie was, but I could kiss her for this handy recipe.

I love these muffins-I am up to my gills in zucchini so I doubled this recipe this morning and added 2 plus cups of grated zuchs to the muffins-I had full muffin tins but they turned out super! I know how to get rid of more zucchini now this winter--I am loving all the variations of this muffin!
