my sea kelp came!

Interesting, looks like some sort of clear wire, hard to explain. No smell YEAH, no flavor but does have sort of a crunch. I added it to chicken and salsa, it took on the color of the salsa and the flavor and I LOVE IT!

I add a bag of kelp noodles to my stir-fry from time to time. Love it!! It looks very strange, but it just takes on the taste of whatever you add it to.

I tried them in soup and they were good. They have no flavor, and take on the flavor of whatever you cook them in. I don't like them crunchy, it's kind of like the fingernails on the chalkboard type thing. I haven't tried them in a stir fry yet. I think I will like the miracle rice better.

I read if you soak them in lemon juice it helps with the crunch and I would love to try them in pho. Just wish I could find them locally.

I went to WF yesterday and asked for kelp noodles. The lady laughed and said that they didn't have them, but I was about the tenth person to ask for them in the past few days. Lots of LCF readers, perhaps? She said they'd probably get them in since they were seeing such a demand for them. Can't wait.

I tried soaking them in lemon juice and didn't see a big difference. For me, I liked them chopped up real small and adding them to soup. I just wasn't thay crazy about them, and am excited to try the miracle rice instead.

I think if you leave them soaking overnight or 48 hrs they soften up. Not sure what you would soak them with though. I just know that when I went to eat my leftovers, they got softer each day. On the last day, think it was 2 or 3 days later - they were completely soft. No crunch at all.

Finally tried the miracle rice and I loved it!! I made a beef and broccoli stir fry with it and it was so yummy. I can't wait to experiment with more recipes using it.

I used the kelp noodles in a crock pot concoction and they softened up a lot.

Our Grand Asia market carries them. They're simply called "seaweed noodles". I haven't tried them yet, don't quite know how to use them.

I finally worked up the nerve to try the kelp noodles I ordered a couple of months ago

I rinsed them well and cut some up for on top of my salad. I loved them!!! They don't have that weird smell that shiratake noodles have. I do love the Miracle Rice, but the noodles not so much.

The directions say to store them in water, but since I want to use them on salad I wonder if I should do that. I liked them crunchy and don't really want them to soften up.

If you don't use them all at once, how do you store them?

Oh, I was really excited to see that Netrition carries the Sea Tangle brand. I can't find anything like this locally so I am thrilled that I can get them from Netrition now.

Any new ideas on how to use them?

....and today is Friday..I boiled mine for about 15 minutes..Still a bit crunchy..I will put them in water and refrigerate and see what happens to soften them up.

On the net, I saw a site that said put them in a water/vinegar or lemon juice solution..Hot water with a ratio of one part water to three parts lemon/vinegar for 45 minutes to an hour..

Nutrition confusion

I purchased Sea Tangle Kelp Noodles online and will probably order more from Netrition.....but I have a nutrition question.

Sea Tangle says for a 4oz serving of kelp noodles there are 6 calories, 1g of carbs, 1g of fiber, 0g of sugar, 35mg of sodium, and 0g of protein. Ingredients are water, kelp, sodium alginate.

A brand I found locally which is labeled seaweed noodles for a 1.75oz serving there are 24 calories, 5g of carbs, and .4g of fiber, 1g sugar, 230mg sodium, and 1g protein. Ingredients (only thing in English) are seaweed extract, water, sodium alginate, salt.

Looking at the noodles in the bag they look identical - same color, size, everything.

Anyone have any idea if they are the same and the nutrition labels are just incorrect on the seaweed noodles? Would love to buy the seaweed noodles locally at a much cheaper price, but not if there are 5g of carbs in 1.75oz serving.

I had the same experience, high in carbs and calories compared to what I expected. Mine were also labeled "seaweed noodles" and had the same ingredients as yours. They've been sitting in my fridge for 2 months as a result -- probably won't use them.

Thanks for the info. At first I thought it was just mislabeling....but I think its correct and nothing at all like the kelp noodles. I paid $1.99 for mine, but I'm just going to toss it. It is way carbier and has too many calories to enjoy.

Such a shame! I called 3 health food stores, 3 "organic food stores, a couple of vitamin places, but no one has kelp noodles. I checked a couple of asian markets yesterday and 1 had the seaweed - but neither had kelp

Guess I will be placing another order through Netrition. They do give great service, I was just looking for a cheaper price.

I love the Miracle Rice and wished the Miracle Noodles were easier to deal with. The kelp noodles are going to be another treat.

I never could either Carolyn, no matter how long I let them soak in lemon water. Did you use hot water to soak them in? I only used cold water, but after sitting in the fridge for two or 3 days they never did soften up. I like using zucchini for noodles.

Yup, Ginaaa..I soaked them in hot water, boiled them, soaked in the fridge with vinegar water overnight..

Best served raw and crunchy..Any ideas how we would serve these cold and crunchy?

I'm not very innovative but I did add some of the kelp noodles to Linda Sue's Cali/Ham salad. I drained the noodles on paper towels and cut them up and then mixed into the salad. It was very tasty and added crunch.

I'm probably going to try a coleslaw recipe. Since I think I might have a thyroid issue I've been trying to avoid raw cabbage. Maybe the kelp noodles could replace the raw cabbage.

The other night I went to make a salad for myself only to discover that I had no more lettuce so I used the kelp noodles, a couple of grape tomatoes, a few mushrooms added the salad dressing and 1T of 4C Homestyle Romano and it was very tasty.

When I get back to crockpot cooking, I'm definitely going to try the noodles in those recipes. It is just too dang hot for casseroles right now.

I think Sistertzu mentioned using these. She hasn't posted in quite awhile. Hope she is ok. If I see her post again, I'll ask how she uses these.

Try this Kelp Noodle Salad from Sea Tangle:

Kelp Noodles
Honey Mustard Dressing
Cucumbers, sliced
Carrots, sliced
Apples, thinly sliced
Salt, to taste

Combine all ingredients and mix well.

Soaked in lemon juice and hot water for about 2 hrs then rinsed and added tomato sauce. Back in fridge for another hour and they are very soft. Tossed in some shrimp and Parmesan. Delicious
