Fish Kabob's

I concocted this recipe driving down the highway this afternoon.

I had some Whiting Fillets that I needed to cook and some LC yogurt that I made yesterday, and wanted to combine the two, as well as fire up the grill! All the measurements are approximate because I just threw it together.
This recipe is Non-LC hubby approved!



I think this would work for most any fish. I'm going to try salmon next.

Whiting Fish Kabob's

15 Whiting fillets
3/4c. LC Greek yogurt, strained
2T. dried dill weed, crushed
3 packets True Lemon
salt
white pepper, ground

Prepare grill to med./low heat. Spray fish basket with olive oil, set aside until ready to use.

Mix yogurt, dill, lemon and salt/pepper in small bowl. Rinse fillets and pat dry with paper towels. Smear yogurt mixture on inside of fillets. Starting at the small end, roll fillet and secure with skewer. Put 3 fillets per skewer.

Place skewers in fish basket and place over coals. Cook until lightly browned, turning as needed. Fish is done when the flesh is firm and appears white. Serve immediately. Enjoy!

These look great. I am always afraid to grill fish. I need to get a fish basket.

Thank you! They did turn out really tasty.

I never wanted to grill fish either. Always hated the thought of them falling through the grates. I picked up the basket yesterday because I've been wanting one forever! I found it at Target and it's adjustable. I love it and I really loved the taste of the grilled fish. Just in time for the summer season.

Interesting! Dill doesn't agree with my stomach, so I'd likely sub in other spices, like maybe some turmeric and onion powder for a Middle Eastern flair, or perhaps some Garam Masala for an Indian flair. I may try this method of preparing fish soon. I just love char-grilled fish!
