Breakfast Ideas - No More Eggs

I have never been a big fan of eggs. So breakfast is the hardest meal for me to figure out. I can do eggs about once a week no matter how dressed up I make them. Otherwise any more than that and I start to gag them down. So for those who aren't big egg eaters what do you do for breakfast to stay low carb. Also keep in mind that I am just starting week two of induction so induction friendly would be helpful.

This'll seem strange, but I have a bowl of low carb vegetable soup in the mornings most of the time, with a small piece of cheese. I get queasy just thinking about eggs that early in the morning, but don't have problems with them later in the day.

Make up the batter for a OneMinuteMuffin (OMM), thin it with a little water and make pancakes from it. Add some LC maple syrup on top! Voila! A not so eggy breakfast.

Or make some sausage cream gravy and serve on a OMM (made w/o splenda and cinnamon) split and toasted.

Breakfast for me is mostly a cup of coffee with lots of HWC to keep me full for hours

Other times its a OMM. When I have time, Betty R's amazing waffles. This week it has been Widget's donuts. Also, sometimes its leftovers from dinner the night before. Breakfast is the first meal of the day, it can be anything you want. Doesn't have to be eggs. My motto is don't force yourself to eat things you don't like.

I just remembered that I used to fix this a lot. It's a pancake from Linda Sue that is not really a pancake - as she explains at the bottom of the recipe. It's more firm and flat, but it's almost all flaxmeal and quite tasty. If I'm really hungry, I skip the syrup and top it with an egg fried over easy.

I like to make zucchini "hash browns" with hot sausage (the ground kind)..
I use 3 zucchini for my husband and I and it cooks down so much.. you could use 4 for two people.

Peel and then use the peeler to make ribbons.. saute in butter and garlic and ground spicy sausage.. (or ham, or whatever breakfast meat you like)..

I really like this when I get tired of eggs.

Smoked sausage. It's fatty and greasy and yummy. about three one inch pieces keeps me full for the entire morning. It's also quick and easy. A side effect, seems to keep me regular.
Hash browns from jicama. Delicious.

I have been feeling the same way, especially this past week when I was sick. This morning I was able to eat leftover deviled eggs, but I have just been eating non-breakfast stuff (taco salad, steak, chicken, etc). On some days, that is all I can stomach!

Well, I had leftover snapper with tomato caper relish for breakfast. It was D-Lic-i-ous! But then, I've always been happy as a leftover-pizza-for-breakfast-kinda-girl!
