Granola - Converting to LC


I recently had this and it sooo good, but am wondering if anyone would have an idea how to make low carb/

• 4 cups old-fashioned rolled oats
• 2 cups sweetened, shredded coconut
• 2 cups sliced almonds
• 1 1/2 cups dried cranberries
• 1/2 cup vegetable oil
• 1/2 cup honey
• 2 teaspoons ground cinnamon
Preheat the oven to 350 degrees F.
Toss the oats, coconut, almonds, and cranberries together in a large bowl. Add the cinnamon, and stir and toss again.

Pour the vegetable oil and honey over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring every 10 minutes with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.
Remove the granola from the oven. Pour into a large bowl and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.

Do you think that I could safely change out half of the oats with flax and of course use SF coconut and fruit? I am pretty tired of eggs!!!

I'd skip oats all together, here's a great granola sub:

I also decided I was tired of my regular breakfasts and came up with this recipe for granola to eat in low carb yogurt.

Cinnamon Almond Crunch
1 cup Almond Meal
1 cup Flax Meal
˝ c whole flax seeds
˝ c almonds, slivered or chopped
1/3 c chopped pecans
˝ c walnuts chopped
1 tsp cinnamon
2 tsp baking powder
1 scoop unflavored soy protein
2 tsp salt
2 egg whites
1/3 c canola oil
2 T sugar-free brown sugar
1 ˝ T Splenda
1 T imitation honey
1 tsp vanilla
Mix all dry ingredients, except sugars, together. In a large bowl, mix egg white until frothy. Add oil, sugars, honey, soy protein, salt, cinnamon, baking powder and vanilla. Beat again until well mixed. Add to dry ingredients and mix until moistened. Spread on baking pan and bake at 325 degrees until crunchy. Every 10 minutes, stir and break up pieces.
