Not sure how this will work with cooked shrimp but these are my favorite ways to eat shrimp. Since yours is cooked already, you would have to be very careful not to heat it too much since it may get tough if its over cooked.

Sautee minced garlic in butter, add heavy cream and parmesan(green can), chopped fresh basil, add the shrimp and then top with italian 4 cheese mix or plain mozzarella - I eat this with Dreamfields Penne

Sautee garlic, ginger, green onions, thyme in VCO then add shrimp and brocolli

Salad with shrimp on top, along with hardboiled eggs, kind of a chef's salad but with shrimp. Excellent.

Do you like spicy stuff? I've made my version of camarones a la Diabla using cooked shrimp before. If you would like the recipe let me know and I'll post it for you.

Mostly, with cooked shrimp, I make cocktail sauce using SF ketchup (Heinz makes one, or you can make your own using LindaSue's recipe), wasabi paste, minced green onion, lemon or lime juice, and Worcestershire sauce, all to taste.

Recipes differ, but my version is garlic sauteed in butter and olive oil, a little red pepper flakes, cook/heat the shrimp and finish with a squeeze of lemon. Other variations I like is with white wine and/or parsley.

Here ya go! Since your shrimp are cooked, just add them at the very end and only stir into the sauce long enough for them to heat through.

Shrimp a la Char - a Diabla takeoff

2 pounds peeled large shrimp
1/2 red onion, sliced thinly
3 small red peppers, thinly sliced
6 cloves garlic, minced
3 tablespoons achiote oil OR bacon fat OR olive oil
2 tablespoons butter
1/2 teaspoon chipotle pepper paste (pureed canned chipotle peppers/sauce)
1/4 cup tequila
1/2 cup red salsa
1/2 cup Frank's or Cholula chile & Lime hot sauce
1 tsp. oregano
pinch cumin

Heat oil and butter in large nonstick skilled. Saute onion til starting to get tender. Add minced garlic and stir. Add red pepper and stir, cook til starting to get tender.

Add chipotle paste, oregano, cumin, Franks chile & lime hot sauce and red salsa to skillet, stir to blend, bring to a simmer.

Add shrimp - cook, turning, til JUST turning pink.

Add tequila to pan and cover pan - simmer til shrimp are just cooked through. Uncover and simmer a few minutes to cook off the alcohol.

Still one of my (own) favorites
http://www.lowcarbfriends.com/bbs/lo...imp-bacon.html

Creamy Shrimp and Bacon
serves 2
1lb shrimp, peeled and cleaned
3 slices bacon, cut up into pieces
1T olive oil
2T diced onion
1 clove garlic, minced
1/4 cup diced red or green bell pepper
1/2 tsp minced fresh jalapeno (optional -can use more too)
4T heavy cream
1T parmesan cheese(optional)
1T chopped parsley (optional)
salt and pepper to taste

Heat oil in a non-stick skillet and add bacon, saute until crisp then add onion, garlic, jalapeno and peppers. Saute until almost soft then add shrimp and cook for 3-4 minutes until shrimp is cooked through.
Add cream, salt and pepper and cook until cream comes to a boil. Turn off heat and add cheese and parsley, if using, stirring until well blended.

*This is really good over mashed cauliflower.
New note:
**This is not "saucy", it's just enough liquid to glaze the shrimp. If you want a sauce, add 1/4 cup half and half along with 1/3 cup chicken stock and simmer until it's heated through then add the cream last to thicken it.

Shrimp Melt - if you make any of the LC breads/english muffin type things, with the cooked, refrigerated shrimp just add some mayonnaise to hold it together and some shredded cheese mixed in. Put on the bread, add some cheese on the top and put in a toaster oven, 350-375-ish (or regular oven) for 10-15 minutes or until it's warmed up and the cheese on top is melted.

The easiest shrimp recipe I make is sauteed in olive oil with Old Bay seasoning. I do use raw shrimp though, so the seasoning has time to cook on to the shrimp.

A few times I made Linda Sue's Broccoli & Cauliflower gratin and added some shrimp to it. Makes a really nice hot casserole dish and induction friendly.

I also make shrimp alfredo, shrimp scampi plus other stuff I can't think of at the moment.

I'm having it tonight! I threw shirataki linguini in a pan, left them a while to get most of the water out, added philly southwest stuff in the tub to it, a blob of sour cream, I'M OUTTA GARLIC! Tossed in some mozz cheese and then the cooked shrimp. I can't wait for lunch tonight!

My favorite recipe!!!

Shrimp alfredo with Yellow Squash Zoodles.

Saute shrimp with some olive oil and butter, and pepper.
Saute zoodles and mushrooms,
add alfredo to the shrimp pan- to get the extra bits then mix.

Delicious and easy!!!

Blackened Shrimp and Veggies
1 lb raw shrimp, shelled and deveined
2-3 cups of onions, green and red peppers, and mushrooms, sliced in bite-sized pieces
1/4 cup olive oil, divided
2 tbs blackening spice

mix shrimp with 1 tbs olive oil and 1 tbs (or to taste) blackening spice
mix veggies in a separate bowl with 1 tbs olive oil and blackening spice to taste

heat 2 tbs olive oil on a cast-iron griddle until screaming hot and slightly smoking.
quickly stir-fry the veggies until beginning to blacken
fan the smoke alarm
push the veggies aside or put on a plate and tent with foil to keep warm
fry the shrimp until just browned on one side, then turn to brown on the other side (about 1-2 minutes per side, don't overdo!)
serve over cauliflower rice. (I made George Stella's very good yellow rice for this)
