I've lost my copy of your wonderful carnitas recipe!! I tried looking it up with 'advanced search', and looking through your posts, but with no luck~ If it's too much trouble to find it, that's okay, I totally understand!

Elaine, that's the shredded version which is delicious.

I also make a chunk version - pretty similar, start with a bone-in or boneless chunk of pork shoulder that will fit in your crockpot, put a diced onion in the pot first, add a couple bay leaves and a stick of cinnamon and some dried Mexican oregano, then the meat, then pour a beer over it, then enough water to just barely cover the meat.

Cover and cook til the meat is tender.

Carefully remove meat to a platter or carving board and let cool til you can handle it, then cut it into about 1.5" cubes.

Line a rimmed baking sheet with foil. Spread the chunks out on the foil. Melt some bacon fat or lard and drizzle over the meat; you want just enough to coat it lightly - toss so all cubes get some fat.

Now pop into a preheated 425* oven and turn the cubes every 15 minutes or so, til they're getting browned and crispy in some spots.

Either way it's delicious stuff!

Oh, thank-you ladies! They both look delish, but the chunk one is the recipe I have used and lost, so I'm a happy camper! Gonna' make this for my DH and DS this weekend - we all enjoyed it so much the last time I made it...it's really to die for!! Thanks again for the help!

Check out the chili recipe I just posted too - it's a real man-pleaser recipe. My DH asks for it and it's seldom he REMEMBERS the various meals to ask for them again!

Not only THAT we call it "weight loss chili" because we BOTH lose weight when we eat it!

For me, a cup is very satisfying, DH eats a cup and a half. It's a real caloric bargain for the level of satisfaction I get from it.
