Awesome Sausage Casserole

I changed a Sausage Casserole recipe around to make it more low carb. I'm very pleased with it! It's the best one I've ever made, even my non low carb kids loved it. I am not good with pictures and have spent a long time putting this on here. I hope I do it right.

1 lb Sausage
1 Medium green pepper, chopped (I omitted this)
1 Small onion, chopped
1 pkg small curd cottage cheese (16 ounce)
2 Cups shredded cheddar cheese, 8 ounces
7 eggs
1 Cup milk (I used 1/2 cream 1/2 water)
1 Cup biscuit/baking mix (recipe below)
1 Can chopped green chilies (I threw in some dried jalapenos)


Directions
In a large nonstick skillet, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain. stir in the remaining ingredients. Pour into a 13 in. x 9 in. x 2 in. baking dish coated with nonstick cooking spray.

Bake at 350 degrees F for 35 40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

Coconut Flour bake mix: 1/2 c. Coconut flour, sifted, 4-5 tbsp. grated butter, 2 tsp. baking powder, 2 packet sweetener, 1/2 tsp. Gluccomanon. Mix the dry ingredients together, toss with grated butter, coating it evenly. Then crumble together with fingers or pastry blender.

I didn't do the picture right. Oh well. I'm tired of trying to figure it out. The recipes is great though.

I thought about using the bake mix with other things too. I made it up for this casserole, and was very pleased with it. I should have made it clear that I used the whole bake mix for this recipe, not measuring out 1 cup.

I wondered about changing quantities in the bake mix, like no glucommanon, or less baking powder, but my husband has forbidden me to tamper with it. LOL

The picture looks great. This is wonderful to have available for those times I have to bring something to a gathering. It does not look weird and I think non -LCers would enjoy it as well. Thanks for sharing!

Looks yummy, I will have to try it soon. Picture turned out fine, I am 'picture challenged' myself, lol, but I do find photobucket pretty easy to work with.

Not that anything on here looks weird, just got to have things look just right when I bring anything to places. I am known for bringing and slipping in things that are healthy for us (and that I can eat!) but others don't always look at it quite that way.

Tilly, I know exactly what you mean. People think I'm weird...my 20 year old daughter included, I mean especially. I was so excited about how good it was that I had her take a bite. She ended up taking a big piece! Success, in my mind.

You know what is funny though, is sometimes I wish no one likes it, so I can have more, or leftovers. Haha

I agree with you, Criosa. Some of these recipes I make for myself, my daughter (and other one when she is home) likes. I just look at them and think, mine, mine, mine!!!!! all the while, I teach them to share,

I wish I could go back and edit a recipe! The recipe is good, but I would like to add that when you the make the bake mix, not over work it. You just basically want to coat the grated butter with the coconut flour mixture. If you overdo it, you will have a lump which will be harder to stir into the casserole. I think fingers or a fork would work best, not the pastry blender.

Out of curiosity, I combined the coconut flour mixture, with half of the baking powder, with a cream cheese custard pie. It didn't make a pie like dessert, but a combination of pie and cake. Very yummy, but I have no idea what to call it. I overworked the bake mix and made a lump, so I just mixed the whole thing with a hand blender. My husband loved it! I'm glad I didn't waste the ingredients!
