I have been low-carbing for over one year, and I finally made the flax sandwich buns.

OMGGG.

I repeat, OMGGGGGZ. Why did I wait so long?

I loveth. They taste so bread-y! So good right out of the oven. (Well, they can cool for a couple minutes, I guess.)

I made cajun turkey and havarti sandwiches to go along with Italian meatball soup by The Pioneer Woman (using a turnip instead of potato, worked perfectly).

My husband asked for another sandwich.

I tink that means it = good.

Evil Honey Bear was just a funny internet picture found on reddit. :D

He requested more buns for next week, lol. I think I'll make a salad on the side using the LindaSue ranch dressing. Our favorite ranch ever!

I tried the almond thins after a year of lowcarbing. Why did I wait so long??? They are a great snack when you need crunch, or have cheese ball that needs spreading.

Are most people using the golden flax meal in this recipe as Linda Sue's picture looks like she may have used the dark kind. I have to say I like the golden flax meal much better.

I did use the dark kind the first time I made them because that's what I had. I always buy the golden kind now. At the bottom of the recipe page, I've got a photo of some made with golden flax:

So wonderful and STURDY and taste so good. Second batch I made without the onion and onion powder but added a tsp more sweetener. Fabulous with almond butter. These will be a frequent addition at my house.

Linda , if I put this in a 8X8 pan, do you think that would work?? I can't find a muffin top pan anywhere locally!

I have been making these buns for a couple of months and they are amazing. Perfect for a breakfast sandwich, too. I have subbed half the flax with garbanzo flour. They came out great, also. I wish I had a bigger (can't think of the name of the pan...like a flat muffin) pan.

I have been wanting to try these for ages, just haven't gotten a muffin top pan yet. I miss sandwiches sooo much! Wrapping things in lettuce leaves just doesn't cut it for me. My mission is to get a pan this weekend, gosh darn it! I could be eating a bacon and egg sammy by tomorrow. :D

In the mean time, this might help you. I make the one minute muffin, minus the splenda & cinnamon, add in savory spices (whatever will compliment my sandwich filling) and instead of a mug, I spread it in a loaf pan & nuke. Cut the rectangle into two squares and enjoy.

My favorite is garlic, oregano & parmesan with turkey.

I just never liked the one minute muffin in it's 'sweet' incarnation so I decided to figure out a way to make the recipe work for me.

I came back to this thread to say that I just finished eating a turkey sandwich on one of these FANTASTIC flax buns (made in my newly-purchased muffin top pan). Having something bread-y again is so awesome, you don't even know. *heart*

Visiting grandkids and didn't have a muffintop pan so doubled the recipe and made them in a cookie sheet. Got 12 nice pieces that will make great sandwiches or toast. I like this recipe the best of all that I have tried.
