HELP - Need 'camp food' ideas!

My wonderful fiance has decided for his 50th birthday he wants to tent camp in the Everglades ... God help me! We want to pack light because we are camping on a 'chickee', which is VERY small and in the 'freakin' middle of nowhere' ....

Anyway, I need to figure out foods I can bring for ME that don't need refrigeration. I already figured on jerky and canned tuna/chicken. I figured some peanut butter, but I'm not sure what I'll put it on. I'll have mac 'n cheese and oatmeal for my guy .... but I really don't want to get hungry enough to resort to that!

PLEASE ... help would be greatly appreciated!

Do cheese sticks need to be refrigerated? I know you can get half and half that does not need to be refrigerated - I'm definitely getting those for my coffee. I was wondering about other dairy products. If I could get some cheese - I'd be fine.

String cheese and other individually wrapped cheese will keep for a day or two without refrigeration.

Does anyone have a good recipe to make 'homemade' instant oatmeal? I'm thinking I could make something with oatmeal, flax, LC brown sugar, nuts ... so then I could get add boiling water.

I would use almond meal instead of oats. Almond meal, flax, nuts or sunflower seeds and some sweetener.

Hate to ask an obvious question ... but is that just ground up almonds? I have almond flour (I just bought it). Is almond meal different?

If you need light weight food, Mountain House makes a couple of freeze dried "Wraps" meals that are meant to be eaten with tortillas. Of course you can use low carb tortillas with them. I have one here- Buffalo style chicken and it is 3 carbs. I like them..

You could make tuna muffins and freeze them. They are dense and thaw slowly. You could place in your cooler while you drive to your campground. They would be good for first night.

Good luck, and in the winter I'll bet it is really beautiful there (no bugs maybe?). Will you be able to keep a cooler and bring ice in?

We will have a small cooler for the fish we catch (fingers crossed) and the bait- but we don't have the space to have too much.

And I'm hoping there are no bugs this time of year ... especially those pesky no-see-ums.

I'm getting close to my homemade instant 'oatmeal' that I can just add hot water to.

I'd love that "oatmeal recipe" when you are ready. If it is LC. I make a granola cereal that love and I eat it with almond milk.

Also Deb see if you have a Smart and Final store or Cash and Carry store, or any restaurant supply for those little packages of mayo, mustard, cream cheese, onions and others for your camping. This is what we do.
