Italian Sausage Soup..

This is easy..Don't have the carb count as it depends on how much you eat.
It's not perfect, but it has no bad carbs and it is delicious and filling.

Serves 4

1 small onion, chopped
1/2 red pepper, chopped
1/2 orange pepper, chopped
3 Italian mild or hot sausages, cooked and sliced. (I did them in the oven)
2 cans of Hunt's diced tomatoes with garlic, oregano, etc.
1 small can of tomato sauce
1 can of water
1 zuke, sliced

In your soup pan, add some olive oil and saute the onion and peppers until
softish. Add the cans of tomatoes and the tomato sauce and water. Heat until warm and then add the sliced zuke and the sliced cooked sausage.
Cook for about 30 to 40 minutes until the flavors have melded and zuke is soft.

Serve in bowl with parmesan cheese sprinkled on it.

LOL..A high school girl from church came over with the "cat outfit" and took Alex's picture.
This was the happiest one..LOL..

Yes, the soup is wonderful and it is all gone...which is nice to make a smallish amount and not have it lying around forever.

I cooked all the Italian sausages in the package and froze the other two cooked ones for another day.
