Cranberry orange scones made with Carbquik

Ok, so I posted my scone recipe a little while ago on a Carbquik thread. Today I decided to experiment with making it Cranberry/Orange for Christmas... and it was mmmm mmmm good.

Here's the recipe.
Cranberry/orange scones Makes 6

2 cups Carbquik, 192g
4 Tblsp cold butter, cut in small bits (2oz)
2 tsp baking powder
1/2 cup splenda / other sweetener
1 Egg
1/4 cup heavy cream *
1/4 cup water *
1 tsp Vanilla
1 cup fresh cranberries (sliced in half)
1 tsp orange essence

Cut cold butter into the Carbquick either with a pastry cutter or two knives until it looks like coarse meal. (Use of electric hand mixer OK)
Stir in the baking powder. Stir in the cranberries. Add sweetener (if using wet to wet bowl, or dry to dry bowl) and stir in.
Mix the wet ingredients together and pour into the dry mixture.
Stir until the dough forms and comes together, but do not overwork.
The dough should be somewhat loose and sticky.
On parchment paper, very gently pat or roll the dough to 3/4-inch thick.
It helps to sprinkle about 2 tablespoons of Carbquik over the top of the dough to prevent sticking. Cut with a 2-inch biscuit cutter.
Place the biscuits on an ungreased baking sheet and bake at 425º for 9-11 minutes until golden brown.
Can be frozen

* Or, use 1/2 cup Carb Countdown whole milk and omit water.

They don't rise much so make sure that you roll the dough the full 3/4" thick.
Mine take 11 minutes to get nicely browned.
Let rest a few minutes before eating – they’re less crumbly that way.
Can be made in ramekins sprayed with pam. Works quite well. (Add about 2 minutes to time if baking in ramekins). I weigh the dough and divide the amount by 6 and then weigh each portion for the ramekins and just press them into the ramekins well.

Let scones rest 3-4 minutes when removing from the oven, they are initially VERY tender.

Add some cheese, jam and whipping cream..... YUMMO
