Just so I don't mess this up.... does this recipe include the splenda... liquid sucralose.. AND the erythritol? I just want them to come out just as the look in that picture! Heavenly!

WOE: started with Atkins, now just low carbs

FINALLY made these yesterday. Okay, so before baking them I kept grabbing bits of dough, just like HC cookies, but as I know in my heart (and carb counts), tasting the dough does not count

I ran out of erithrytol when putting them together, only had a 1/4 cup (Netrition order on its way, yeah!), randomly grabbed some stevia, oh boy yum! Refrigerated dough for a bit then baked a few in the toaster oven. They are very very good. And nice thing is it makes a LOT. I baked a few and I still have dough in the frig. This way I space them out. Ate some again today (kept them refrigerated but pulled them out to get to room temp before eating), still good today. I like them better than the HC recipe I used to make.

Thanks Jennifer!!!!! This will be my go-to choc chip recipe. Oh I did add the walnuts, have a huge bag from Costco. Maybe I will make it better (how does it get any better?) next time by toasting the walnuts ahead of time, and there WILL be a next time.

Oh, Tilly, you are a card! You had me laughing! I do the very same thing. You know, my sons brought store bought chocolate chip cookies (packaged ones) at Christmas and I had a corner of one to see what it was like to compare to the ones I had in the freezer. No comparison, thankfully, otherwise I might have been tempted to try more than a corner!

Seriously, though, sometimes we can say our low-carb versions are tastier and it's not a pride thing or anything, just a sense of accomplishment, hey? Also it is nice to say we don't feel deprived. Gotta love that!

No problem, MinpinMommy. Hope you try them!

I was wondering what I can use for subbing out almond flour? I went to make them and I only got 1/2 cup of almond flour left. Atleast I still got tons of Jen's baking mix left. Any suggestions would be much appreciated

Use Jen's bake mix . That's what I use.

I wrote other things here. But I guess I don't understand your question.

Which bake mix do you have?

Its my fault, half a sleep when I wrote that. I went to go and make these chocolate chip cookies and I only got alittle bit of almond flour left. The recipe calls for 1 1/2 cups of almond flour. I got lots of Jen's gluten free baking mix and was wondering if I could just add 1 1/2 cups more of that in place of the almond flour.

The recipe actually calls for 1 1/2c almond flour AND 1 1/4 c GF mix.

She wants to know if she can use ALL GF mix because she is out of almond flour. I think it will work, but the cookies will be higher in carbs and not quite the same taste.

Thanks DRJ
Apparently I didn't look at it right LOL

We need Jen. I've used all GF mix in this before. It came out great. I added 1 more egg and 1/4 cup more of butter.

Wow I'm sorry .

Thanks, Libby.

Yes, you can use all Gluten-Free Bake mix. My feeling is you would need to increase the butter to 1 cup. Other that, I'm thinking it should work.

Thank you, Esther for fielding these questions.

P.S. MinPinMommy - that is a gorgeous baby!!
