Sauteed Scallops in Cream Sauce
I came across some frozen sea scallops at one of the big box stores. They were large and looked delicious. Here's my low carb recipe:
16 oz frozen sea scallops.
I thawed the scallops by soaking them in salted water. I placed them in a 900 Watt microwave for 10 minutes at 30% power. The frozen scallops were covered in salt water while in the microwave.
While defrosting, I gently sauteed three slices of pancetta in a saute pan. I removed the pancetta and retained the grease. I melted 2 tbsp of butter on low heat, and added four cloves of crushed garlic and two finely sliced scallions. I added 1 tsp of cumin and 1 tsp of paprika. I added a pinch of ground white pepper and a pinch of ground cayenne.
I turned up the heat to medium on the saute pan to frying temperature and placed the scallops in the oil for two minutes,. I turned the scallops over and sauteed for another two minutes.
I removed the scallops and added 1/4 cup cream to the saute mixture. I diced the pancetta slices and added the sauce. I turned down the heat and simmered until the liquid was reduced by half. Pour the reduced sauce over the scallops and serve.

This sounds really good. I found jumbo scallops at the seafood store today so hoping to make something soon with them.
