I've only been low carbing for 7 weeks so I've been looking around for a good cookbook, and found these wonderful looking books and this website. I ordered Volumes 1 & 2 and cant wait to get them. The photos of some of the recipes have me salivating!

I just got mine yesterday so I am still reading. Don't know what to try first They all look so good, but right now my diet is super strict and I cannot have any of the food just yet But it won't be long.

I made the Old Fashioned Blueberry Muffins on Pg 96 Vol 2 They were delicious! I did tweak them a bit. I used 3/4 tsp cinnamon instead of 1/2 tsp. I had some crumb topping that I had low-carbed & put it on top of the muffins. Yum.
I made the Thousand Island Salad Dressing on Pg 47 in Vol 3. Tonight I am going to make the Big Mac Pie on pg 32 Vol 3 Will let you know how it turned out

I made two soups from volume 1 last week, both from Maria Emmerich. I really only intended to make one - I was looking for a Cream of Mushroom Soup - but it was so fabulous that I decided to make something else of hers and ended up making the Tomato Gorgonzola Bisque because she said she loved it. Now I love it too.

This is my first recipe/dish from the volume 1 cookbook I am making. It is in the oven right now. We love gouda and cauliflower. So we expect to be making this again. I will report back with the family's reaction. Like I mentioned above, I am unable to have this but my family sure can!!! Cannot wait for a few more weeks when I can have it too!!!

Reporting back on the Big Mac Pie. It has been soooo long since I have had a Big Mac that I forgot what they taste like. But this casserole was very good.

Oh, forgot to mention that the Smoked Gouda Cauliflower recipe is a hit!! I know I said I wouldn't have any, but I snuck a bite. Yum!!!

Oh, I'm so glad you liked it, Dawn. It truly has become my fav way to serve cauliflower after plain buttered, mashed. The key is to get a quality smoked gouda. Sam's has a pretty good one, I think. I bought one at my Mom's store in San Antonio that was just totally tasteless, so they are not all created equal.

I made Kent's Awesome Broccoli Casserole yesterday (Vol. 3, page 46) and it is really good. I made it as posted except I added 1/2 each of medium red and green pepper, garlic powder and only 4 oz. cheddar cheese. I had some leftover ham so threw that in also. Today I cut it into serving size squares and froze half of them for later.

Another recipe I tried is the "Broccoli Bacon Salad" on page 279. It was awesome!!!! I added shredded cheese to it as well as a few Craisins (I added about 10 to the whole salad, so not much at all, just what was left in my opened bag). It was truly yummy. And good thing the kids didn't like it--me and DH about finished the whole batch in one sitting. Will have to make some more tonight with the remaining broccoli I have in the fridge. I could soooo go overboard on this, it is that good LOL.
