Creamy Coconut Pumpkin Fudge

I just made this and it is yum It is delicious warm and I have it in the fridge cooling now. My changes: instead of using the honey/maple syrup I use my Torani Pumpkin Pie syrup I got from World Market. Just 1/4 cup was enough for me! I got it off the Tropical Traditions site, so I cannot link it, but here is the recipe:

Creamy Coconut Pumpkin Fudge (Dairy Free)


Servings: 30 1-inch squares
Preparation Time: 5 minutes

1 cup coconut cream concentrate
3/4 cup pumpkin puree
1/4 - 1/3 cup honey or maple syrup
1/2 teaspoon cinnamon
1/8 teaspoon allspice
1/2 teaspoon vanilla extract
Pinch of salt

In a small saucepan, heat coconut cream concentrate and pumpkin puree over low-medium heat. When the coconut cream concentrate is melted, lower the heat and add honey or maple syrup, spices, vanilla extract and salt. Mix well.

Pour pumpkin mixture into a well-greased bread loaf pan. Cover with parchment paper and refrigerate overnight or freeze for 1-2 hours. Cut fudge while cold and serve immediately.

This sounds so good, Dawn! I'm not a big fudge fan, and almost never make it, as I always find it too sweet. Never been a real big sweets eater. But I love pumpkin and coconut and may just have to try this recipe on for size. Thanks for sharing with us!

Tropical Traditions sells it or you can make your own. It's just coconut meat. I've made it in a food processor and in my Vitamix. Just dump unsweetened coconut flakes in and pulse away until it resembles butter or cream. There's another brand I've seen at my local food co-op as well called Let's Do Organic.

Nope. Mine doesn't come sweetened. I get it from Tropical Traditions.

I think I like the fudge better warm than cold. But it is still very yummy! I think it has to do with pumpkin stuff for me. I like pumpkin stuff warm and gooey not cold and firm as in the fudge.
