I miss Jellied Fruit Slices!
Found a recipe on "About.com", but don't know how to low-carb it! (Okay, have a few ideas, but not sure if they will work!) :dunno: I for sure would use Crystal light in place of the fruit juice! Would any of you awesome cooks on here have a tip for me? Thanks so much for checking this out:
"These simple jelly candies can be made using almost any juice, as long as it has been strained (if necessary). Try making a few different varities to serve together. Also experiment with different shapes, and with rolling the jellies in sugar and leaving them plain.
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
•4 tbsp unflavored gelatin
•2/3 cup strained fruit juice of your choice
•6 tbsp sugar
•4 tbsp corn syrup
•food coloring, if desired
•superfine sugar, if desired
1. Prepare a 6-inch inch pan by wetting it lightly with water.
2. Place the gelatin in 4 tbsp of water to soften for about 5 minutes.
3. Place the juice, sugar and corn syrup in a medium saucepan over medium heat and stir until sugar dissolves.
4. Stir in the gelatin and continue stirring until gelatin dissolves.
5. At this point add food coloring if desired.
6. Pour into prepared pan and leave until completely set.
7. When set, turn out of pan and cut with a sharp knife or cookie cutter into desired shapes.
8. Jellies can be rolled in superfine sugar, if desired, or served plain.
this sort of recipe is very tricky to low carb. the corn syrup and sugar give it the texture you expect, and duplicating that will take a LOT of experimenting, I think.
you can make gummy candies just with gelatin, water, sweetener, flavoring, and a souring agent though. not hard at all. there was a thread here ages ago, you can probably find it by searching.
Yes, Ravenrose, I have that recipe for gummies, but really miss that jelly-slice candy! Oh, well, I figured it was probably impossible to duplicate Lowcarb! Thanks for the info, though! :shake:

I tried making something similar several years ago but wasn't all that impressed with them. I'd based mine on a high carb recipe that I used to make. I prefer the fruit leather/gummy recipe that Soobee mentioned. Here's the one that I tried and didn't care for:
3 packets unflavored gelatin, Knox brand
1 cup cold water
2 tablespoons orange rind, from 2 small oranges
1 tablespoon lemon rind, from 2 small lemons
1/4 cup orange juice, from 1 small orange
2 tablespoon lemon juice, from 2 small lemons
2 cups granular Splenda or equivalent liquid Splenda *
6 drops yellow food coloring
In a large pot, sprinkle the gelatin over the cold water and let soften 5 minutes. Bring to a boil; cook and stir until the gelatin is dissolved. Remove from the heat; add the remaining ingredients. Stir 3 minutes, then strain into a well-oiled (or use cooking spray) 9x5" loaf pan (I lined mine with foil). Chill 4 hours until firm. Turn out of the pan and cut into cubes by pressing down with a sharp knife. Do not drag the knife through. Store in the refrigerator.
Makes 40 candies
* This will only be low in carbs if made with liquid Splenda. It's not worth all the extra carbs from granular Splenda since it would take 2 cups or 48 additional carbs. If that's all you have, granular Splenda will still work.
With liquid Splenda:
Per Candy: 3 Calories; trace Fat; trace Protein; trace Carbohydrate; trace Dietary Fiber; .5g Net Carbs
Per 2 Candies: 6 Calories; trace Fat; 1g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs
Per 4 Candies: 12 Calories; trace Fat; 2g Protein; 1.5g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs
Per 8 Candies: 24 Calories; trace Fat; 4g Protein; 3g Carbohydrate; trace Dietary Fiber; 3g Net Carbs
With granular Splenda:
Per Candy: 8 Calories; trace Fat; trace Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
Per 2 Candies: 16 Calories; trace Fat; 1g Protein; 3g Carbohydrate; trace Dietary Fiber; 3g Net Carbs

Jellied fruit slices
I don't see why they can't work
I used unflavored gelatin, substituted lemon juice with Splenda and water for the fruit juice, Splenda for the sugar, calorie free pancake syrup for the corn syrup because I was out of the kind i make myself,
(4 cups sweetener
1 TBS Maple extract
1 TBS butter extract
¼ tsp lemon juice
2 TBS glycerin (boy did I have to look for this one. Glycerin is in a small clear bottle by the bandaid section in Walmart)
1/8 tsp salt
½ tsp xanthan gum
3 cups water
Blend with mixer)
and I skipped the food coloring. I put it in silicon molds, three of them from dollar store in the shape of half moons.
Iput it in the refrigerator and will see if they are good tomorrow morning.
Wow these all sound great. My sister is allergic to fruit. So i've been trying to find things for her. Thanks everybody.
Thanks I've never seen it at walmart. I've gotten it at hobby stores.
