Keeping homemade low-carb ice cream soft

Hello, everyone,

I have two questions about ice-cream making.

I've read through all the threads (and then some!) on making homemade low-carb ice cream. I'm about ready to fire up (freeze up?) my ice cream maker to make my first batch. BUT, I have two questions for you all:

1. If you use glycerin to keep your ice cream scoopable, how much do you typically use for, say, a recipe that calls for 2 cups of liquid? Some recipes call for 2TBS, and this seems like quite a lot!

2. Has anyone used alcohol instead of glycerin to keep ice cream soft? If this works, I'd rather use it.

Yup...I use glycerin..I think my recipe calls for 4 tsp. for 3 cups of cream.
Hmmm..never used alcohol, but you could goggle and find out if anyone does..

I have tried both glycerin and vodka. The glycerin works well and also use 4 tsp. per 3 cups fluid.

You are welcome! And thank you for the post, because as soon as I posted I got up and went to the kitchen. In the ice cream maker is coconut ice cream. I tasted a little and it is to die for!

Just want to add one more note of thanks. I made maple ice cream tonight using Davinci's, and I used 1 TBS of glycerin for a little under 3 cups of liquid. The ice cream turned out fabulously. And to think that I was ready to part with my ice cream maker!

I've tried Vodka and it didn't keep it soft. The one that stays soft the longest is locarbmans recipe. It's on here someplace....................... Ann

I bought a small test bottle from a local health food store (food grade vegetable glycerin), but next time I'll order it from Netrition. Better price.

It is readily available if you have decent grocery stores/health food stores around. It's used as a skin softener, too, so you might want to look for it in the relevant aisles. At my health food store, it was kept with the cosmetics. But the version I bought is labeled as food grade.

I was checking to see what the carbs were in glycerin and there seems to be some confusion on that. Does anyone have a clear idea of the number of carbs?
