Low-carb glaze?

I was wondering if anyone has had success making a low-carb glaze? I've had success with low-carb buttercream or cream cheese frosting. But I'd like to make a glaze that hardens. Any ideas? I'm thinking maybe xylitol, but I'm not sure.

This sounds odd, but I accidentally made a peanut butter glaze using coconut oil. I used Spectrum refined (no coconut flavor), pb2, and liquid splenda and mixed it well. I poured it over this chocolate concoction I created (it was butter and cocoa powder mixed and baked), and it created a glaze that hardened.

I'm hoping to do some petit four experimenting soon and have a few thoughts on how I might be able to get a glaze to work. Not sure though. I think it'll be a bit tricky. Have to go to Dallas for a funeral this weekend, so I won't do much on this for a week or so. Stay tuned.

you can make a very good glaze with powdered erythritol and a TINY bit of water. if you do it in a plastic sandwich bag, you and massage it till will mixed then snip off a tiny corner and pipe it in zigzags, which looks nice.

I put it on hot muffins, and have never tried it on something cold with the objective of getting it to harden, but I bet it would.

I saw this recipe from Tropical Traditions recently. I haven't tried it yet.

It uses coconut cream concentrate mixed with honey to make a frosting. It would probably work with another sweetner.

I would soften the coconut cream in a pan over hot water, not directly in a pan on the burner.



Gluten Free Pumpkin Spice Cookies

Servings: 48
Preparation Time: 10 minutes

1 cup pumpkin purree
6 tablespoons flax seed meal
1 teaspoon xanthan gum
2 tablespoons apple cider vinegar
2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup honey
1/2 cup coconut oil, melted
2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
2 cup almond meal
1 cup coconut flour
2 teaspoons baking soda
2 teaspoons baking powder
Icing:

1 cup Coconut Cream Concentrate
1/4 cup honey
Pre-heat oven to 350 degrees F. In a mixer blend together pumpkin, flax seed meal, xanthan gum, apple cider vinegar, vanilla, salt, honey, coconut oil, and spices.

In a separate bowl combine almond meal, coconut flour, baking soda, and baking powder. Add flour mixture to pumpkin mixture and blend well.

Roll Tbsp size balls and flatten with hands. The dough will not spread while baking. Place on cookie sheet lined with parchment paper and bake for 8 to 10 minutes. Cool on wire rack or paper towel.

Icing:

Carefully soften coconut cream concentrate in a small sauce pan over low heat. It will burn quickly so stir constantly. Add honey. Place a 1/2 tsp of icing on each cookie. It will be the consistency of play dough. With your fingers press out the dough to the edges of the cookie.

Does it crystallize when it cools? I was thinking xylitol might be smoother...

Kevin had a recipe for a low carb glaze.
LC Glaze Kevin
1/4 cup powdered erythritol
1 T. not/Sugar
1/4 t. splenda quick pack
4 t. cc milk
1/4 t. vanilla

Whisk together erythritol, not/Sugar, and splenda to remove all clumps.
Whisk in milk and vanilla until smooth.
