Upside Down Cheese Cake *pic*


I saw this recipe and decided to try a recipe of my own

2 8 ounce block of cream cheese soften
1/2 cup of sour cream soften
2 eggs
1 teaspoon vanilla
Sweetener (i used a mixture of pure powdered sucrose and powderedErth.)

Topping
1 cup mixed nuts (I used walnuts and pecans), finely ground with 3 packages of Splenda

Preheat Oven 350o

In a bowl mix cream cheese, sour cream, and vanilla. Mix well and add sweetener too taste. Mix in eggs. Pour into glass pie plate lined with parchment paper.

Sprinkle topping of the top and bake for 10 minutes. Place a piece of foil over the top and continue baking for 25 minutes. Shut oven off and leave cheese cake in for another 10 minutes.
Let cool.

This cake tastes fantastic warm... thus the picture being only one slice but when cooled it is the best cheesecake I have ever tasted.

Definitely gonna try this. I have never been satisfied with nut or almond flour/nut crusts for cheesecakes or any dessert really. To me, they don't quite hold up and are, at most, a tolerable afterthought. This might let me have cheesecake with some tasty crunchy crust!

Great idea! I hate trying to get a piece of cheesecake out because I always destroy the nut crust. This seems so much easier!

Oh my I was going to start looking for a cheesecake recipe on this forum, but I think I will start with this. I was going to buy 2 pieces at the Cheesecake Factory for a supper, but would rather save some money and make my own. Thanks for sharing!

I can't rember people talking about this but ketosis has some benifits other than
losing weight. It used to be used a lot for epilepsy and in some rare cases still is.
They have also found it helps alhimers and is benificial in some cases of brain cancer.

It is quite good, I made it last night. Had 2 pieces for my dinner. I think next time I will put the nuts into the blender and I see now that it does say finely blended, add the sweetener like the recipe calls for, but then add some melted butter to it as well. Was small enough to bake in my toaster oven in a silicon pie plate. And except for the nuts, I put everything into my food processor. Clean up is a breeze. Onward to pull it out for tonight as well!!!! I would make this again. Thanks for sharing!!!

OMG mmorris!! This cheesecake is to die for. I did have a slice while it was still warm, but after being in the fridge overnight the result is just delicious. Thank you again for sharing

I couldn't believe it tasted so good warm... I ate 2 pieces then had to put in the fridge too cool or I would of eaten the whole thing...

Whenever I make a cheesecake I blend everything besides the eggs, add sweetener sparingly until I get the desired sweetness then I mix in the eggs (hope this helps)

I used a 1/4 cup erith, 1/4 cup Truvia, and 1 teaspoon of Fiberfit. Seemed too good to me! I had to stop eating this wonderful thing. I gained almost immediately. Two pieces in my frig and not sure what to do with them. I should trim them waaaaay down in size and just nibble.

Hey Char I check up on ya from time to time!

Hope you try this cute little cheesecake, small enough for toaster oven...a plus in hot weather.

I shared it with LC buddy Jacki (my origional inspiration person waaaay back when, with our Lemon Pound Cakes) ..she gave thumbs up, and after 11 years of taste-testing each other's LC concoctions, we only approve the good stuff! lol
