Corn Dogs and Onion Rings




There was a festival in the town that I shop in yesterday and all I could smell was corn dogs, onion rings, funnel cake etc. So I started searching high carb recipes to convert and I stumbled across the one at the "Hillbilly Housewife" site. I used way too much flax and it came out quite crumbly. It reminded me more of a corn meal cracker mix for fish. The flavor was wonderful and if I can get the texture right I'll be quite pleased. Somehow the batter seemed better on the onion rings. Perhaps because there was less batter on the onions. So sort of a success now, but not quite there!

1 cup Half and Half
2 medium eggs
1/4 cup oil
3 drops liquid splenda
1 teaspoon salt
2 teaspoons baking powder
1 1/3 cups golden flax meal
1 cup Carbquick
1 to 1-1/2 pounds hot dogs
Carbquick for dusting the hot dogs so the batter doesn't slide off
Oil for Frying

In a large bowl mix the milk, eggs, oil, liquid Splenda and salt. Whisk in the baking powder, golden flax meal and Carbquick. Mix together and add water if too thick. Make sure the hot dogs are dry and dust with Carbquick. While putting the batter together, heat the oil. Dip corn dogs (use your fingers to slide some batter off if they look too covered. The extra baking powder makes them really puff up. You can see by the pic mine got a little wide) and put in hot oil right away. Fry til golden.Sprinkle with salt on onion rings while hot. Exact same procedure with onion slices for onion rings.

Thanks! If you try it please let me know if you find a way to make the batter softer! Great for onion rings, not quite for corn dogs.

I made corn dogs with my old Atkins pancake mix and regular corn meal for the grit. Not as low carb as yours though, but pretty tasty. I added red pepper flakes and jalapeno to the batter mix. Poured it into a tall glass and dipped the hotdogs. They ended up flattening out in the skillet though! I haven't tried it with onion rings though. Cool idea.

Will do! I'll have to ponder this one for a little bit - I loooove me a good corn dog, and eye them longingly when fall fair time rolls around.

Wow yours look much more corn dog like than mine! They are lovely! The end of summertime around here there is a festival in every town. Last week where I shop, this week the town where I work. The smell of these foods is everywhere!
