Wish me luck!!

I am making this cake for my son's 6th birthday: Whisk Kid: Say it with Cake - {Super Epic Rainbow Cake}

I was originally just going to make a regular cake and stay the heck away from it, but then I started thinking, why can't I make this low-carb?

So that's exactly what I'm going to do! I'm going to use Splenda and almond flour instead of wheat flour and regular sugar. The rest is simply eggs and butter!

We will also be decorating the outside of ours with candy buttons, but I'll just pick those off. I figure the layers are thin enough that the almond flour should hold up pretty well; it usually does when I use it to make muffins. I'm not worried about the cake part not being as sweet with the splenda, because the frosting will be sweet enough!

I hope this works! lol

I'll definitely post pictures! The only difference is in the icing...we're using banana flavoring instead of lemon!

That's a gorgeous cake!

If you have not yet made it - be aware that blanched almond flour is nearly 2 to 1 sub. for white flour - so if you'd have used 3 cups of white flour, be prepared to use as much as 6 cups of almond flour.

That's been my experience anyway, and also someone else on the board (Beeb? CarolynF? Jen?) has mentioned the same - just about 2 to 1 ratio of substitution. AND it may not have the same texture even at that. BUT I bet it will be good just the same!

Can't wait to hear how it turns out.

Wow...that should make a kid's eyes bug out of his head. LOL....It is so over the top~ I love it. I probably wouldn't attack a cake that complicated but I sure admire people who do. Can't wait to see your version of it. I'll bet it will be so good! Lucky kid.

Rainbow Cake

Being a lazy LC cook, I was thinking that I could make the
CoolWhip cake twice and have four layers. Then start with the
frosting. It would be smaller, but not quite as daunting.
I love the cream cheese frostings that we make It's gorgeous and
thanks for posting it.

i was hoping for an update on how this turned out. I am going to make a rainbow cake for my daughters birthday- she turns 5 on st. patrick's day. I think I will just use an almond flour cake recipe and probably go buy some sugar free canned white frosting to decorate it.
