Thanks for the suggestion but there is no need to thicken this when I use 1 3/4 cups of Calorie Countdown Milk. It works just great!!

I hate the instant regular or SF, so I always use the cook and serve.

I use 1 cup water and about 3/4 - 1 cup heavy cream. I just fill the rest of the cup of heavy cream up with water.

When those PMS cravings hit, the chocolate cook (not instant) pudding really helps.

I am glad you found the way that works for you.
If you ever want to try coconut milk again, just 1 tsp Xanthan gum per each cup of coconut milk will make the instant pudding perfect.

Beeb,
Instead of using 2 cups milk, I used 1 cup coconut milk and 1 cup of half 'n half. It set quickly and tasted yummy! Even my 13 year old liked it!

I just cut down the amount by 1/4 of a cup and it works fine now!
