Lauren's Chocolate Zucchini bread

I have this in the oven and if I had to go by just this, it is going to be reaaallly good! I left out the buckwheat and put in some vital wheat gluten in its place. Everything else I kept the same...

I just made a variation of this during the week. It's delicious! Don't overcook it though - it get's dry.

I accidentally left ours in a bit too long, but the flavor and texture is still really yummy!

I just took it out, about 10 minutes before the timer went off...it was smelling like it was done...I go by smell too..it smelled good...so it is on the counter cooling...can't wait to try it!

Hey Mary! How are you? Other than baking what have you been up to? Good day here!!!! Wish you could join me, I opened a bottle of champagne just because. You could bring your bread, yum! Champagne and chocolate zuc bread. No problem here.

Did you use all the different nut flours or all almond flour? That is what is keeping me from making this bread.

The bread turned out wonderful! It is rich and chocolatey... I used all almond flour and I forgot to say, I left out the cinnamon! It seemed like chocolate cake to me, which is great! Next time I think I may cut the zucchini a little coarser because I used the fine blade on my grater... I would make this again NO PROBLEM!

I can't leave well enough alone, () so this morning I sliced it into 20 slices and put some whipped cream/cream cheese frosting in the layers, made it into kind of an icebox cake. It is delectable!! It's still in the fridge getting cold, will probably frost the outside of it with more whipped cream... I will let you know how it turns out, maybe try to post a picture.

Oh my goodness, that sounds just wonderful. Yes, if you could post some pictures. And thanks for letting me know that you can use all almond flour. I have that here and already ground, so much easier. Thanks!!!!

What did you do for the frosting, mix only the whipped cream and cream cheese or what?

Hey Tilly! The frosting part was cream and splenda, I added some gluc. powder to stabilize it and used some splenda and stevia to taste! If you want, you can use the same filling to frost it and you wouldn't need the gluc. powder... I'm glad you like it. That was only half the cake btw...
