Pork Loin Crock Pot Recipe?

Hi all - I need some creativity from you guys. I just bought a 2.5 lb. half pork loin. I would love to put it in the crockpot tomorrow and have it ready for dinner. Will pork loins shred after cooking? Any ideas for seasonings?

I've made pork loin in the crockpot and have used a jar of salsa for flavoring. I also like using the fresh made salsas that you find in the refrigerated section of the grocery. And yes, you will be able to shred the pork - it becomes very tender in the cooking process.

BTW... the pork just got done. It's AMAZING. Falls apart. A bit spicy, but I added some more Coke so it should tame it down a bit. Could always add some BBQ sauce, too.

SOO good and easy!

Yes I did use a loin - probably should have used a shoulder or butt for this type of recipe, but it still turned out extremely tender and literally fell apart when I went to "shred" it!!

I am thinking of trying this on my rotisserie - minus the coke or liquid... then maybe slicing? would that work with just the rub? I have a huge pork loin and I am going to cut it in half and do it two different ways..

I have a hunk o' pork in our slow cooker while I'm at work all day today! It's this recipe. I made it a little over a week ago and we loved it!

I could not find "1/4 cup chipotle sauce", so I took these:



and put them in the food processor, then I poured that over the meat.

I strained the sauce/fat liquid goodness when it was all done cooking and then I only used less than half the sauce (for fear that it would be too spicy).

It actually tasted better after sitting all shredded in the juices for one day.

Oh, and to make it "carnitas-like", I fry up the shredded pork in some butter before serving it. Mmmm, boy.
