I had to change the recipe a bit, because they came out dry like dirt in the babycakes maker. So I upped the fat! I added more butter and HWC. They are pretty yummy and very sweet. Thanks again!

Well, the kicker is that I read it as 3/4 cup HWC and wondered why my first two batches were so darn soupy.

I use Maria's coconut flour baked donut recipe with great results in the Babycakes - I get 18 donut holes. I cut her recipe in half, and here are the quantities I use:

1/4 cup of coconut flour
1/8 tsp salt
1/8 tsp baking soda
1/8 tsp baking powder (my addition)
3 eggs
1/4 cup of Swerve or equiv AS
1.5 tsp coconut extract
1/4 cup coconut oil, melted
1/2 tsp vanilla extract
1/4 tsp almond extract (I usually omit this and double the vanilla since I love my good Mexican vanilla lol)

Combine dry ingredients in a large bowl. Combine eggs with extracts then add to dry ingredients, then mix in melted coconut oil. Stir until dough gets quite firm - almost like a cookie dough batter. I put about a teaspoon of dough in each well, they take about 3 minutes to bake. If they don't seem quite done, I spin them around and close the lid on them for another half minute. You can frost if desired, or dip in Walden Farms caramel or other flavors, or if you have the calories to spare and want to be really decadent mix up a quick caramel sauce with butter, cream and Swerve and either dip whole pop to coat, or dip as you eat.
